On this page, our grower champagnes are categorized according to their dosage. From the particularly dry Brut Nature to finely balanced, slightly sweeter varieties. The dosage, i.e., the residual sugar content in champagne, has a significant influence on its flavor profile and how well it pairs with food. 100% Pinot Noir Dosage: 2g/l Single vineyard in Verzy (Grand Cru) Vinification in concrete eggs including malolactic fermentation Filled unfined 36 months bottle aging Nicola OCT23: Powerful, juicy, light-footed acidity, nutty aftertaste, minerality at the back, robust, minimally earthy David OCT23: great aromatic spectrum, a lot of expression and power paired with finesse and depth Nicola JUL23: Red-fruited with lots of power and drive, leaner and more direct than the Chardonnays (which is because they are not from the Cote des Blancs). Masculine, powerful, compact fruit and at the same time elegant and precise.

We discover aromas of paprika, pepper, some stone fruit and damp forest soil. The mousse is very powerful. It is firm on the palate and shows very light ripe tones and a nice spiciness. On the finish, which, as with the other cuvées, just doesn't want to end, we find a nice, salty freshness.Nicola FEB24: Dark, earthy, full-bodied, still a little closed, salty.Tasting AUG22: Creamy with hints of butter croissant and very animatingly roasty. Initially a little rough and firm, air and time give it more and more drinkability and allow notes of Roiboosh tea, Palo Cortado, chocolate and nuts to shine through. Polarising but highly exciting!

Ideal pairing with seafood and savory dishes."Tilman MAR26 (B20): More taut and austere than the normal Solessence, with slight oxidation, but beautifully balanced and with great length.Nicola MAR26 (B20): Freshness paired with ripe notes: honey, brioche, with vibrant freshness, straightforward. Nicola FEB24: Iodine, salty, strong body, has something chocolatey in the finish. Moritz FEB24: On the nose, oyster shell, almost something maritime, as well as some mandarin like in the classic Solessence. It has more power than the "simple" Solessence, but is also somewhat lighter on its feet and fresher. Lukas FEB23 (base vinatge 2017 - Prolongue): On the nose complex with hints of dried fruit. On the palate ripe apple and some pear and hints of currant and black elderberry. Very nice acidity that gives this champagne a very nice draught and very long finish. Tasting FEB20 - Base 2014, 3 years longer ripening than Extra Brut, therefore extremely complex, long, very long reverberation: sings and vibrates, very nutty, almost creamy

Vauversin Cuvée La Petite Haye
100% Chardonnay Dosage: Brut Nature (0 g/L)Vintage: 2021 Production: 1,244 bottles In the frost-affected 2021 vintage, the Rossignol vineyard suffered severe damage, leaving too few grapes for a separate vinification. Instead, Laurent Vauversin chose to vinify the untouched La Petite Haye parcel on its own, with outstanding results. After several months of ageing in oak, this exceptional single-vineyard Blanc de Blancs was bottled – a cuvée that will only be released as a standalone wine in exceptional vintages. Tilman JUL26: A lovely, elegant and playful nose. On the palate, it has a medium-bodied structure, lovely ripe citrus aromas, firm yet soft acidity, a hint of nuttiness and absolute elegance. Highly recommended!
