Here, a new, young winemaking talent wants to explore the potential of his grapes and locations in Chezy-sur-Marne in the western Marne valley. Chezy is a remote place on a small river where hardly anyone else makes champagne, explains Tom Gauditiabois, adding: "But my goal is to put Chezy on the champagne map."
His production site is currently still in a hall in Épernay, but the construction of the winery in Chezy is in progress and vinification is to take place on site as early as 2023.
Tom drew inspiration from stays abroad in New Zealand and from working with Anselme Selosse - a time that had a big impact on him. He then began producing around 1,000 bottles of his own champagne in the 2016 vintage, aged in wood.
So far, every cuvée is completely different from the previous one: individually adapted to the vintage and the ripeness of the grapes. His first vintage was a pure Pinot Meunier, while the 2017 vintage is made up of 50 percent Pinot Noir and 25 percent each of Chardonnay and Meunier. Tom wants to get to know his terroir and gain experience in order to get closer to his idea of champagne over the years. He works with fully ripe grapes, very low dosage and uses little sulfur. Storage sur lattes takes about three years, but this is to be extended to five years in the future.
Therefore, at the moment there are only individual editions in very small quantities, which will probably not be repeated, but adapted and continually optimized.
