The natural winemaker with a love of terroir
The Piollot winery is located in Polisot, a tiny village in the Aube, and is run by Roland Piollot and his wife Dominique Moreau, who is also the owner of the renowned Marie Courtin winery. For more than 50 years, Roland Piollot's family has endeavoured to bring out the authentic terroir of the plots, which are all located in Polisot.
In the vineyard, the vines were not renewed by purchasing new clones, but rather by cuttings from existing vines with favourable characteristics. These included some very old vines of the Pinot Blanc grape variety, which 99% of all winegrowers had discarded a long time ago. In the meantime, the so-called forgotten grape varieties are making a strong comeback.
The winery has been certified organic since 2009. Great importance is attached to maintaining the natural health of the vines. More recently, the base wines have been matured in wood and only naturally produced yeasts are used. Roland and Dominique want to create a holistic system in which the vines and terroir can express themselves as they emerge from nature itself and as is typical of the Côte des Bar region.
The champagnes are mostly undosed, straightforward and pure. They usually consist of one grape variety, one vintage and one parcel. They are not fined, filtered and only minimally or not at all sulphurised.
