80% Meunier and 20% Chardonnay 50% reserve wines Dosage: 3g/l With this cuvée, presented for the first time in 2019, Maxime proves his enormous talent in champagne-making. Animating flavor, fine-pored mousse, full of pressure and creamy thanks to 50% reserve wine. Juicy and complex, intense in ferns and expression and yet extremely refreshing and drinkable! All Doamaine champagnes are matured in wood with the traditional measure of 205 liters. These are made especially for the two of them by a nearby barrel producer and provided with different toasting levels. One looks for the perfect harmony with the greatest possible respect for the natural processes in the vineyard and cellar and is already on the way to organic certification. Tilman FEB24: Juicy, powerful, spicy and still with great freshness. Very expressive and ever evolving in the glass. Lukas FEB23: In the nose strawberry, raspberry and blueberry and hints of melon. Very juicy in the mouth, the very nice acidity perfectly underpins the apple, raspberry and citrus flavors, with light notes of wafers on the finish. Very animating to drink with great draw. Tasting JUL21: Strong character, spicy grip, very coherent in itself, tells its own story, very long, very coherent, spicy finish. Intense and interesting, you almost wait until you take the next sip. A great food companion: baked apple, toasted bread, dried fig, dried apricots, beautiful perlage. Might go very well with liver pâté or similar.

They are low in sulfite (less than 35mg/l)! Riddling by hand in natural cellar! Tilman FEB24 (vintage 2019): Floral-frischer Beginn, dann mit leicht oxidativer Aromatik immer komplexer werdend, mit schönem Zug und würzigem Finish. Tasting JUL21 (base 2016): powerful and spicy, lots of power, nice use of wood, expressive, exotic aromas, open aromatics but not too ripe, subtle spiciness, long finish. Tasting FEB20 (base 2014): 2014 has less acid than 2013, which makes it a bit more accessible, the wood aroma is beautiful, extremely long, nutty finish. High tension, like a whole feature film so complex, super nice spiciness - but rather delicate spiciness, prancing length. Tasting JUN19 (based on 2013): very independent, ethereal, floral, calm but resounding. Clean and gentle, yet powerful. Aromas cannot be grasped, with every sip of new flavors, always extremely harmonious. Light-footed, very long, somehow poetic. The acid is medium-strong, but still gripping, then melts off nicely, so that you catch up with the next sip. If he breathes longer he gets very delicate, extremely charming notes of milk candy - addictive potential!

70% Meunier, 30% Chardonnay Dosage: 3g/l From two plots in Petit Morin (age of the vines 70 years) Fermentation and aging in wood (11 months on the fine lees without battonage) Spontaneous malolactic fermentation Hand riddled Disgorgement a la volée"Nos esprits libres et contents" is a song by the 17th century French court composer Antoine de Boësset. Nicola NOV23: Incredibly juicy and "gschmackig", with a beautiful finish of yeast & brioche, long nutty aftertaste. Great multi-layered fruit, extremely pleasant. Moritz OKT22: Rustic-modern describes the Nos Libre Conton pretty well. A vinous body and aromas of speculoos meet a coniferous forest etherealness and wonderful minerality. Despite the incredible complexity, the wine remains accessible and has an incredible drinking flow. A tart, fruity finish lingers forever in the mouth and invites you to dream. Nicola JUL22: Herbal-spicy nose, apricot, plum, rich, great food companion, dark berries, fresh leaves, has pressure, ripe red-cheeked apple, something is stirring here.

On the palate, the mint is more pronounced and the fruit is more cherry-like with a slight malolactic fermentation. This creates a charming creaminess. However, the taut acidity cuts through the creamy, round body like a butter knife and gives the champagne more dimension and additional freshness.Nicola OKT22: Berry, earthy, beautiful tannins, rich, food companionMoritz OKT22: Chardonnay-heavy rosé from a single vintage and aged for at least 1 year in wood is a rarity. But the Libre comme l'air is exactly that. Spicy and playful with a light red fruit flavour and a taut acidity. A truly complex rosé that leaves you wanting more.
