In 2003 the decision was made to plant Fromenteau, Arbanne and Petit Meslier together with the classic grape varieties in one plot. The vineyards lie on loamy and sandy limestone soils, some with flint in the municipality of Chavot-Courcourt. No use of pesticides or other chemical agents. Manual harvest with optimal ripening of the grapes, spontaneous alcoholic fermentation in at least 10 year old barriques from Burgundy for 6 months with regular stirring of the yeast ('bâtonnage'). No malolactic fermentation Then the base wines are fed into a Solera system. 40% reserve wines mature here, to which 60% of the current vintage is added every year. 60% Pinot Noir and Meunier, 40% Chardonnay Dosage: 0g/l Base year: 2015 89 months on the lees under natural cork Jacquesson: 60% of the harvest came from Aÿ, Dizy, Hautvillers and Champillon and 40% from Avize and Oiry. Winter and much of spring were wet and mild. This was followed by a period of drought and heatwaves which lasted until mid-August. Alternating periods of wet and cool conditions and hot, dry weather characterised the rest of the growing season. We harvested a perfectly ripe and healthy crop from 10th-30th September. Yields were modest, acidity levels adequate and the quality consistently high making this a truly splendid harvest. We can really feel the essence of Pinot in this blend which is made up of reserve wines from the cuvées N°742 to 735.

Its expression of character, origin, identity and great elegance is unique. The nose reveals toasted hazelnuts and almonds. The enormously long yeast storage spreads an absolute sense of well-being through the smell alone. Yellow and green apples in all facets. Brioche spread with butter. Almond biscuits and shortcrust pastry. Your mind is totally lost. Lemon tart with burnt meringue. And there is always a wall of pure chalk and filigree behind the countless aromas and nuances. Can't wait for the first sip. As soon as he starts drinking, he really gives it gas. A great combination of maturity, yeast autolysis and minerality. The mousseux creates the first moments in a creamy and opulent manner. As soon as the melt has reached its peak, its balanced acidity sets in and ensures a tightrope walk. The acid harmonizes brilliantly with the incredible minerality. Lemon and apple aromas provide the freshness kick. The maturity of the wine cannot be denied. It has power and pushes across the palate, but in the end it nestles wonderfully and lingers for a long time. Wow! 50% Chardonnay25% Pinot Noir 25% Meunier Dosage: 0g/l Since 2006, Marguet has been working with Hervé Jestin, the former chef de cave of Duval-Leroy who is now a consultant to many wine estates around Europe. Marguet has gradually integrated Jestin’s homeopathic and biodynamic practices into his own winemaking, and the two of them have collaborated to create a special, naturally grown champagne that encapsulates and expresses Jestin’s philosophies. The first vintage of this super-cuvée was 2006, released in 2013, and the production was divided: half of it was sold under the Jestin label, with the other half under the label Sapience, which Marguet has indicated is a separate brand from the Marguet label.
