88% Chardonnay, 12% Pinot Noir Dosage: 32g/l 30% reserve wines 2 years of bottle maturity The higher dosed cousin of the basic Cuvée Premier Temps. Fresh, fruity and, thanks to its high sugar content, perfect as an accompaniment to dishes with Asian spices or to desserts that are not too sweet. The Tocade has a dosage of 32g / l, which is the lowest amount for the Demi-Sec category, so in addition to the sweetness an invigorating freshness is preserved. Tastes of candied citrus fruits, acacia honey, a little bit of mint with a lot of finesse and harmony. Demi Sec champagnes are more versatile than many think: they go perfectly with high-quality desserts, Asian dishes, liver pâtés or cheese specialties. At the end of the menu, they freshen up the palate and let the evening fade away with a sparkling finish.

For the assemblage, the most harmonious and accessible wines of the vintage are refined with a good 30% reserve wines and, after bottle fermentation, matured for at least 2 years. The result is a subtle champagne with fine citrus notes and floral nuances. Nicola FEB24: Delightfully nutty, crispy, spicy, nice light fruits, catchy, really fun to drink. Moritz FEB24: On the nose, something vegetative but also lime and a very fine nuttiness. On the palate, fresh and juicy. The nose is well reflected, but everything is carried by a chalky film that brings a great momentum. Lukas NOV22: Fresh notes of spices and apple-pear juice on the nose, juicy apples with a nice spiciness in the mouth, has tension and makes you want more Tasting FEB20: Lots of structure, nice creamy finish, very long, massive, crisp, not so soft, spicy, strong character, lively acidity well integrated at the back. 100% Chardonnay Dosage: 5g/l 100% Reserve wines 4 - 5 years of bottle maturity Assemblage of only high quality and complex reserve wines. 60-month yeast storage leads to typical brioche flavors, fine nuttiness and hints of candied citrus fruits. With all the ripeness on the palate, it is still extremely fresh and salty, mineral. Nicola FEB24: Creamy, delicately spicy with nice freshness and a nutty long aftertaste (could be a bit crisper but might be a day with richer flavors). Moritz FEB24: Relatively warm and spicy on the nose. Aromas of baked apple, marzipan, but also something fresh like grapefruit. On the palate, however, very juicy and fresh with a very creamy finish. Nicola MAI22: Very nice, very mild, unexcited, elegant, relaxed like the owners, ultra drinkable, soft and charming Moritz OCT22: The Chardonnay for the Quintessence is a blend of different casks. From big to small, from old to new, everything is there. That brings power. Despite the powerful body, the Qunitessence looks downright fresh. Citrus fruits and ripe yellow fruit dominate the nose. The tight acidity and the perfectly integrated wood also make the palate an exciting tour of discovery.
