It has minimal, pleasant tannins that provide some grip, generous notes of ripeness and toastiness, and is always fresh and vibrant.Moritz FEB24: The nose emits a warm spice accompanied by dark berry fruits and a hint of red apple. On the palate, the champagne shows its backbone. The acidity is powerful yet does not lose its elegance. A fine spice and tart red apple also dominate the taste, indicative of a perfectly managed use of wood. The endlessly long finish leaves beautiful mature flavors on the palate. A great companion to food.Nicola FEB24: Very aromatic, rich in extract, herbal, minimal sherry aftertaste, biodynamic touch, a slightly wilder release than in previous years.Moritz OKT22: Fresh, spicy and with a skilful use of wood, the bar is set extremely high with this ‘entry-level’ champagne.

A potpourri of sour cherry, red apple, and plum jumps out at you. On the palate, everything appears a bit lighter and incredibly juicy. 100% ChardonnayDosage 4g/lChardonnay from Hautvillers (Premier Cru)Matured in wooden barrels for 1 yearBottle ageing: 5 yearsNo fining, no filtration, minimal addition of sulphurNicola Oct25: Base 18: somewhat fresher, creamier, and softer than the Fondamenteaux, the aromas unfold beautifully, fan out, and then melt in the mouth into a wonderful moment of well-being. Subtle bitter notes in the finish add sophistication and further character.Nicola FEB24: A very strong release, vibrant, fresh, dynamic, lively, captivating, aromatic elegance.Moritz FEB24: An incredibly complex Chardonnay! The nose is voluminous yet delicate. Aromas of white chocolate & caramelized butter are underscored by a fresh, fine etherial quality. The palate is much fresher than the nose suggests. Mint and lemongrass are accompanied by almond blossom and a fine light spice. The round body fills the entire mouth, while the firm acidity provides the necessary backbone. The finish is endlessly long, leaving a taste of wet stones. A play of aromas that leaves nothing to be desired. The champagne benefits from being allowed to breathe a bit.Moritz OKT22: The Eternel Optimisme is by no means a lean, taut Blanc de Blanc. Even the nose promises body. Buttery aromas complemented by a light caraway spice, orange zest and a light green herbaceousness make the wine incredibly complex and interesting. The flavour profile continues on the palate and is rounded off by a very long finish.

Full of tension and length on the palate, juicy acidity. Ripe and yet fresh, powerful. The wood is noticeable on the finish with a slight mellowness and aromatic sweetness.Nicola FEB24: Strong, distinct character, unique herbal fruit combined with prominent but very well-integrated wood, lively and exciting.Moritz FEB24: Present are stone fruits, like vineyard peach, green garden herbs, and a fine woody spice note. On the palate, the champagne is very juicy and playful. Here too, we find stone fruit and a subtle wood spice.

On the palate, the mint is more pronounced and the fruit is more cherry-like with a slight malolactic fermentation. This creates a charming creaminess. However, the taut acidity cuts through the creamy, round body like a butter knife and gives the champagne more dimension and additional freshness.Nicola OKT22: Berry, earthy, beautiful tannins, rich, food companionMoritz OKT22: Chardonnay-heavy rosé from a single vintage and aged for at least 1 year in wood is a rarity. But the Libre comme l'air is exactly that. Spicy and playful with a light red fruit flavour and a taut acidity. A truly complex rosé that leaves you wanting more.

Wonderfully developed, delicious! Extremely harmonious, straight to the point - has retained the delicacy of the Pinot Blanc, still straightforward, elegant, cool, since no sugar, then a wonderful generous mixture of honey, nuts, brioche, cream, chocolate unfolds towards the back , Coffee that blends very gently and inconspicuously into the overall picture. Great development! Rating from Customer: More yellow fruited than I would expect, fresh, linear and inviting to another sip. More interesting than 98% of what I have tasted from this grape. The bottles was empty halfway through our dinner (I would have liked to see it develop over many hours, and luckily I have another) - (93+p)

We discover aromas of paprika, pepper, some stone fruit and damp forest soil. The mousse is very powerful. It is firm on the palate and shows very light ripe tones and a nice spiciness. On the finish, which, as with the other cuvées, just doesn't want to end, we find a nice, salty freshness.Nicola FEB24: Dark, earthy, full-bodied, still a little closed, salty.Tasting AUG22: Creamy with hints of butter croissant and very animatingly roasty. Initially a little rough and firm, air and time give it more and more drinkability and allow notes of Roiboosh tea, Palo Cortado, chocolate and nuts to shine through. Polarising but highly exciting!

84% Pinot Noir16% Chardonnay Dosage: 0g/l Juicy, salty, mineral and complex! The cuvée of annually changing portions of Pinot Noir and Chardonnay from pure Grand Cru locations was fermented in barrels up to nine years old. The Benoît Marguet champagnes are filled without added sulfur and without dosage. Description of Sebastian Bordthäuser about 2016: Nose: The Shaman by Champagne Marguet from the 2016 vintage has been on the lees for around two years and entices with a richly filled display: yeast braid, brioche and pretzel biscuits as well as a generous piece of butter outline the notes of autolysis, which are enhanced by fine notes of apricot with increasing ventilation in the glass . Stoved apples follow, which are accompanied by herbal spices with aromas of sorrel and Giersch. Grounded through the obligatory ground oyster shell, the nose can look forward to the first sip. Mouth: With a creamy texture and small-sparkling Mousseux in the first taste, it is initially a bit quick-tempered, which can be attributed to the short time after the disgorgement and will soon go away. The bread notes of sourdough and pretzels of pretzels are aromatically reflected in the nose. On the palate it is precise but by no means leptosome, but with a good juice and joyful appearance. Its mouth-watering saline vein nestles around the slim acid nerve and, in combination with the fine phenolic, gives it its non-slip, non-slip feel that accelerates its drinking speed immensely. Fruity and tart with animating notes of red, ripe apple in a long, smoky finish. Food Pairing: - Ravioli with young spinach in nutmeg butter and crumbs - Mussels with french fries - Fried chicken wings with red fermented tofu
