Crisp & fruity (primarily apple) and nuanced. 60% Pinot Noir, 40% Chardonnay, Dosage 6g/l Nicola FEB24: Ultra strong, complex, slightly matured flavors but spot on, extremely long, multi-layered, also a bit of a stony element which makes it even more interesting. Ultra balanced. Moritz FEB24: Even with the "entry-level" cuvée, one can feel the elegance and complexity that Eric skillfully wants to encapsulate in the bottle. Everything is very delicate, not too loud, yet very present. A harmony of marzipan, roasted nuts, chalk, and a light smokiness greets the senses. The palate brings out more of the fresh, chalky flavors, which suits the cuvée extremely well. An extremely long finish ties the whole package together. What is sold as an entry-level at Maison Rodez, without overstepping, could be the pinnacle in many other houses. Tasting FEB20: Very strong, made another leap forward since tasting a year ago, very dense, great Tasting JUL21: very complex release, very nutty, very layered, browned apple, slight ripeness, cool, great depth (Eric's language for minerality, chalk contact of vines, mouthfeel).

The cuvée of annually changing portions of Pinot Noir and Chardonnay from pure Grand Cru locations was fermented in barrels up to nine years old. The Benoît Marguet champagnes are filled without added sulfur and without dosage. Description of Sebastian Bordthäuser about 2016: Nose: The Shaman by Champagne Marguet from the 2016 vintage has been on the lees for around two years and entices with a richly filled display: yeast braid, brioche and pretzel biscuits as well as a generous piece of butter outline the notes of autolysis, which are enhanced by fine notes of apricot with increasing ventilation in the glass . Stoved apples follow, which are accompanied by herbal spices with aromas of sorrel and Giersch. Grounded through the obligatory ground oyster shell, the nose can look forward to the first sip. Mouth: With a creamy texture and small-sparkling Mousseux in the first taste, it is initially a bit quick-tempered, which can be attributed to the short time after the disgorgement and will soon go away. The bread notes of sourdough and pretzels of pretzels are aromatically reflected in the nose. On the palate it is precise but by no means leptosome, but with a good juice and joyful appearance. Its mouth-watering saline vein nestles around the slim acid nerve and, in combination with the fine phenolic, gives it its non-slip, non-slip feel that accelerates its drinking speed immensely. This Blanc de Blanc does not belong to the minimalistic, mineral-driven style, but rather is round and balanced with a touch of fragrant flowers. Complex and nuanced due in part to the barrel influence and a perfect pairing partner at the table — to more than just fish! Nicola FEB24: A slightly richer release at the moment, very generous, a somewhat noticeable influence of wood, dried fruits, brioche. Moritz FEB24: Light, but very nice reduction, nose and palate reflect each other perfectly. Salty, wet stones, white almond are predominant, with a background of some dried apricot. All very calm. Very subtle, perfectly integrated wood notes. The mousseux is round but precise, and the long finish is very chalky.

Moritz FEB24: Juicy blackberry, licorice, and a nice cardamom spice give the BdN great complexity. On the palate, full-bodied and juicy, but somewhat leaner than the Blanc de Blanc. The tight acidity provides a beautifully long finish. Tasting FEB20: Extremely long, elegant, great pinot fruit, dense, harmonious, balanced, not too heavy, creamy, acidity very well integrated

100% Pinot Noir Dosage: 0g/l Benoit Marguet cultivates only 0.7 hectares in Bouzy. The vines for the Bouzy Grand Cru Extra Brut are grown in the Lieu dits Les loges and Les Hannepés and are fermented individually in wood. The barrels vary from second to ninth occupancy. Since 2010 the plants have been plowed manually with the horse. Marguets champagne is generally neither enriched nor given a shipping dosage. It works with minimal intervention, without pumps and with little to no use of sulfur. Description of Sebastian Bordthäuser: Nose: The 2015 Bouzy by Champagne Marguet is powerful and demanding on the nose. Walnut biscuits and yeast plaits as well as roasted Piedmontese hazelnuts provide the steep template, followed by citric notes of zests and an oxidized, red-cheeked apple. Salted caramel and fresh white mushroom mix with a delicate smoky note, which is underlaid with herbal notes of borage and a drop of bitter almond oil. A champagne that unmistakably calls for the large glasses, but preferably after five years of bottle aging. Mouth: With a creamy initial taste and a fine pearly mousseux, the 2015 Bouzy has a substantial, opulent palate with an immediate presence from the first drop. Its fruit shines over the extract and is supported by the delicate phenolics of the champagne, which gives it a smoky to spicy back-up. Orange blossom water and Darjeeling make the extremely dry wine appear fruity and tart, balanced by the extract-rich core and its multi-layered, complex and long aftertaste with a spicy, warm finish. No squeamish champagne that still has the best of manners.
