98% Chardonnay 2% Meunier From the individual layers: "Les Gras d'Huile" - Chardonnay - south-east exposure"Les Cormonts" - Meunier - southern exposure Dosage: 0g/l Maxime: The Rosé d'Infusion started with a simple idea: to transfer the method of tea infusion to winemaking. After pressing, we wait for the Chardonnay juices to ferment and then we pick the most beautiful Meunier grapes from the “Les Cormonts” plot. The Meunier grapes are then carefully destemmed by hand to avoid damaging the seeds. Then we pour the Meunier grapes into the Chardonnay must. From then on, we control the infusion several times a day through blind tastings to assess the taste; the color intensity is irrelevant here. Once the perfect balance is reached, we take out the Meunier grapes with a net: the Rosé d'Infusion is born and will finish its fermentation in oak barrels. With indigenous yeasts Batonnage: Only when the wine needs it Liqueur de tirage: Wine from the Cuvée Rosé d'Infusion brewed with organic raw sugar. Dosage liqueur: Identical to Tirage liqueur but aged in Magnum for 18 months. Vinification and aging: Every year in barrels from the Tonnellerie de Champagne and François Frère. New kegs 20%, second fill kegs 20%, fifth fill kegs 60%. Aging of 9 months on the fine lees Sulphurisation: no sulphurisation during harvest to facilitate the work of native yeasts. The result is a very spicy, uncompromising, bone-dry Champagne with a salty note, a powerhouse with great character. If you are looking for a link to Burgundy in Champagne J.M. Labruyere, you have the best example with Paradoxe. Despite the tremendous richness in the mouth - a whole cello concerto takes place here - each sip remains in harmony and balance, without corners and edges, the fine, compact mousse caresses the palate. The animating acidity makes the Paradoxe an ideal food companion from caviar to langoustine, Breton turbot in Beurre Blanc with morels to a zabaglione with crepes and caramel ice cream. What distinguishes this champagne is its seasoning full of character. Moritz OCT22: The beautiful rose gold is radiant in the glass. The paradox is characterized by an angular dark berry fruit. The mousseux is very juicy and gives the champagne a pleasant freshness. The finish is long and slightly tart, which gives the wine even more excitement.

On the label, Arsène is very elegant, like the vintage it characterizes. Jacquesson Extra Brut 748
Mainly Chardonnay, little Pinot Noir and Meunier Dosage: 2g/l Base harvest: 2020 From Aÿ, Dizy, Hautvillers, CHampillon, Avize and Oiry + reserve wines Vinification and élevage on lees in oak foudres No filtration or fining Jacquesson: Winter was mild and very wet whereas spring was particularly sunny and dry. After the stormy June weather, drought set in and these conditions prevailed until the end of September. Beautifully balanced and ripe grapes were harvested early from 26th August until 10th September. Respectful soil management and plant cultivation methods with the aim of expressing plot diversity. Vinification and ageing in large wooden vats on the lees without either filtration or fining. Our Chardonnay grapes characterise this blend despite the addition of reserve wines from the 747 to 743 and the 741 cuvees.
