Labruyere, you have the best example with Paradoxe. Despite the tremendous richness in the mouth - a whole cello concerto takes place here - each sip remains in harmony and balance, without corners and edges, the fine, compact mousse caresses the palate. The animating acidity makes the Paradoxe an ideal food companion from caviar to langoustine, Breton turbot in Beurre Blanc with morels to a zabaglione with crepes and caramel ice cream. What distinguishes this champagne is its seasoning full of character. Moritz OCT22: The beautiful rose gold is radiant in the glass. The paradox is characterized by an angular dark berry fruit.
