The dosage, i.e., the residual sugar content in champagne, has a significant influence on its flavor profile and how well it pairs with food. Vouette & Sorbée Fidèle Brut Nature R22 - Bio
100% Pinot Noir Dosage 0g/l The vines grow on a demeter-certified 3.5 hectare plot, oriented to the southwest on so-called Kimmeridgian soil in Biaunes and Vouette. Average age of the vines: 40-50 years The unbranched vines are pressed with a traditional Coquard press and fermented in 400 and 228 liter wooden vats without the addition of yeast. After fermentation, the wine remains in the barrel on its lees for up to 10 months, during which time it undergoes malolactic fermentation. Approx. 95% from one year with a Minimum share of a perpetual reserve (start 2001) The champagne is bottled unfiltered and without dosage. Peter Liem: The primary wine of the estate is a blanc de noirs called Fidèle, made entirely of pinot noir and almost exclusively from Kimmeridgian soils in Biaunes and Vouette. It’s largely composed of a single year, with just three to seven percent of reserve wine, stored in a perpetual blend (a sort of mini-solera) started in 2001.

The base wine matures on the lees in large wood for a year and undergoes malolactic fermentation.

A powerhouse with wonderful use of wood!Tilman OCT24: Fruity, berry nose, slightly spicy on the palate, supporting acidity, light tannin, enough structure, round, especially in the finish with good fullness, nicely balanced.Fabio OT24: Rather red-fruity, noticeable use of wood, fine yeast notes, certain creaminess on the palate, nice balance. Moritz OCT22: A truly powerful Blanc de Noir characterized by dark berries. A concise wood spice and the dark berries also run through on the palate. All components are charmingly rounded and deliver a mouthful of wine.

A light, pleasant oxidation, flavours of dark cocoa bean and white pepper are rounded off by grilled lemon. You don't want to take your nose out of the glass. The palate has a fantastic grip and a playful acidity.

David Leclapart L’Amateur '22 - Bio
100% Chardonnay Dosage: 0g/l L’Amateur is the house's entry-level cuvée, a blend of six different parcels in Trépail. This single-origin Chardonnay is vinified in enamelled 33 hl steel tanks - Léclapart does not use stainless steel tanks because he is convinced that this generates negative energy. Like all of the house's wines, L'Amateur goes through malolactic fermentation, there is no fining or filtration whatsoever. The result is a powerful Chardonnay, pure and without make-up with a mineral bite. Léclapart's champagnes are different, headstrong and fascinating. The "L'Amateur" is particularly recommended for getting to know the style, as it already gives an idea of what is still to be discovered. Be sure to carafe or ventilate for a long enough time! Peter Liem: The entry-level cuvée is called L’Amateur, blended from five different parcels in Trépail and vinified entirely in enameled 33 HL. steel tanks—Léclapart has no stainless steel anywhere in his cellar, as he believes that it promotes negative energy.
