Strong, already gives a lot of pleasure. No wonder it has matured for about 10 years and comes from one of the most sought-after Grand Cru locations in Champagne: le Mesnil sur Oger. Nicola OCT23 (vintage 2012): Now opens up slowly and gets the beautifully ripe, nutty flavor. Very profound, rich in finesse, elegant, long nutty finish, great combination with the freshness of 2012.

100% Chardonnay Dosage: 3g/l 40% Reserve Perpetuelle At least 2 years of bottle maturity Previously, this cuvée had gone under the name of “Blanc de Blancs” since the beginning of the 20th century. It is made exclusively from our Chardonnays grown on the Côte des Blancs: Vertus, Oger, Avize, Cramant, which form a line close to the 4th meridian. “Longitude” is also an allusion to the length and the very pure, frank and mineral style of these great terroirs, where the chalk is very close to the surface. Vinification and maturation:The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks, our wooden vats and our stainless-steel tanks. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. The blending and the bottling are carried out in July. The bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place over a period of more than 2 years. Each bottle is disgorged manually 6 months before being marketed. The dosage is 3 grams per litre (extra-brut!).

Complex and nuanced due in part to the barrel influence and a perfect pairing partner at the table — to more than just fish! Nicola FEB24: A slightly richer release at the moment, very generous, a somewhat noticeable influence of wood, dried fruits, brioche. Moritz FEB24: Light, but very nice reduction, nose and palate reflect each other perfectly. Salty, wet stones, white almond are predominant, with a background of some dried apricot. All very calm. Very subtle, perfectly integrated wood notes. The mousseux is round but precise, and the long finish is very chalky.

After pressing, we wait for the Chardonnay juices to ferment and then we pick the most beautiful Meunier grapes from the “Les Cormonts” plot. The Meunier grapes are then carefully destemmed by hand to avoid damaging the seeds. Then we pour the Meunier grapes into the Chardonnay must. From then on, we control the infusion several times a day through blind tastings to assess the taste; the color intensity is irrelevant here. Once the perfect balance is reached, we take out the Meunier grapes with a net: the Rosé d'Infusion is born and will finish its fermentation in oak barrels. With indigenous yeasts Batonnage: Only when the wine needs it Liqueur de tirage: Wine from the Cuvée Rosé d'Infusion brewed with organic raw sugar. The result is a very spicy, uncompromising, bone-dry Champagne with a salty note, a powerhouse with great character. If you are looking for a link to Burgundy in Champagne J.M. Labruyere, you have the best example with Paradoxe. Despite the tremendous richness in the mouth - a whole cello concerto takes place here - each sip remains in harmony and balance, without corners and edges, the fine, compact mousse caresses the palate. The animating acidity makes the Paradoxe an ideal food companion from caviar to langoustine, Breton turbot in Beurre Blanc with morels to a zabaglione with crepes and caramel ice cream. What distinguishes this champagne is its seasoning full of character. Moritz OCT22: The beautiful rose gold is radiant in the glass. The paradox is characterized by an angular dark berry fruit. The mousseux is very juicy and gives the champagne a pleasant freshness. The finish is long and slightly tart, which gives the wine even more excitement.

Mainly Chardonnay, little Pinot Noir and Meunier Dosage: 2g/l Base harvest: 2020 From Aÿ, Dizy, Hautvillers, CHampillon, Avize and Oiry + reserve wines Vinification and élevage on lees in oak foudres No filtration or fining Jacquesson: Winter was mild and very wet whereas spring was particularly sunny and dry. After the stormy June weather, drought set in and these conditions prevailed until the end of September. Beautifully balanced and ripe grapes were harvested early from 26th August until 10th September. Respectful soil management and plant cultivation methods with the aim of expressing plot diversity. Vinification and ageing in large wooden vats on the lees without either filtration or fining. Our Chardonnay grapes characterise this blend despite the addition of reserve wines from the 747 to 743 and the 741 cuvees.
