Henriet-Bazin Cuvée Marie-Amélie Millésime 2015 Brut Nature
100% Chardonnay Dosage 0g/l At least 7 years of bottle maturity Nicolas: "It's our daughter's name. During the 2004 harvest, my wife Marie-Noëlle tried every must directly from the press, as she normally does. She had the feeling that three plots of old vines gave a very good taste: ripe, complex, elegant ... everything she loves. So she decided to let some of these pressings mature together. In February, during the base wine tastings, these plots confirmed that they had the potential to make a great vintage. Since my wife gave birth to our daughter in 2004 (December, so she was pregnant during the harvest), she naturally decided to dedicate this beautiful cuvée to her. Then, year after year, the vines continue to age and when the vintage gives it, Marie-Noelle still assembles this vintage. The vines face east on a thin layer of silite with a base of gravel and pure chalk. The eastern exposure gives the balance between photosynthesis and minerality. On the label is a girl, very well dressed, but with a natural style, because this cuvée is elegant, with finesse, but without makeup, only with the natural taste. The girl is carrying a bird cage, but the cage is open. It should show that we are open to nature and that nature should sing and express itself in a natural way. Life in nature is life. It is a metaphor for our method of taking care of the vines and the soil.” Tasting SEP20: Very nice wood note, relatively salty, makes it super exciting, a bit more pressure and presence than Eusebe, you can't taste Zero, also has something delicate, nice Chardonnay fruit, chalky, chalky. Tasting JUL21: very fresh, puristic, still somewhat closed, very straightforward character

Larmandier-Bernier Longitude - Bio
100% Chardonnay Dosage: 3g/l 40% Reserve Perpetuelle At least 2 years of bottle maturity Previously, this cuvée had gone under the name of “Blanc de Blancs” since the beginning of the 20th century. It is made exclusively from our Chardonnays grown on the Côte des Blancs: Vertus, Oger, Avize, Cramant, which form a line close to the 4th meridian. “Longitude” is also an allusion to the length and the very pure, frank and mineral style of these great terroirs, where the chalk is very close to the surface. Vinification and maturation:The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks, our wooden vats and our stainless-steel tanks. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. The blending and the bottling are carried out in July. The bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place over a period of more than 2 years. Each bottle is disgorged manually 6 months before being marketed. The dosage is 3 grams per litre (extra-brut!).

Nicola FEB24: Ultra-complex, vibrant fruit, very strong energy, such lightness and finesse, there's hardly a better rosé out there. Moritz FEB24: Complex and radiant. Cooked strawberry, strawberry leaf, and earthy umami notes offer an extremely diverse taste experience. The acidity almost dances across the tongue with a lightness that is invigorating. The finish seems endless. A rosé champagne for those who have dismissed rosé as trivial and are open to being pleasantly surprised.

Eric Rodez Blanc de Blancs - Bio
100% ChardonnayDosage: 1,5g/l Average age of the vines: 32 years. Vinification: 70% used wood, 30% enamel tank; 70% without malolactic fermentation, 30% with. Terroir: Le noyer St Pys, les Morins, les Genettes, les Champsaults, Les Secs, Les Bermonts, Les Crayères, les Agusons, les Cheminots. This Blanc de Blanc does not belong to the minimalistic, mineral-driven style, but rather is round and balanced with a touch of fragrant flowers. Complex and nuanced due in part to the barrel influence and a perfect pairing partner at the table — to more than just fish! Nicola FEB24: A slightly richer release at the moment, very generous, a somewhat noticeable influence of wood, dried fruits, brioche. Moritz FEB24: Light, but very nice reduction, nose and palate reflect each other perfectly. Salty, wet stones, white almond are predominant, with a background of some dried apricot. All very calm. Very subtle, perfectly integrated wood notes. The mousseux is round but precise, and the long finish is very chalky.

Oudiette Rosé d'Infusion Vendange 2021
98% Chardonnay 2% Meunier From the individual layers: "Les Gras d'Huile" - Chardonnay - south-east exposure"Les Cormonts" - Meunier - southern exposure Dosage: 0g/l Maxime: The Rosé d'Infusion started with a simple idea: to transfer the method of tea infusion to winemaking. After pressing, we wait for the Chardonnay juices to ferment and then we pick the most beautiful Meunier grapes from the “Les Cormonts” plot. The Meunier grapes are then carefully destemmed by hand to avoid damaging the seeds. Then we pour the Meunier grapes into the Chardonnay must. From then on, we control the infusion several times a day through blind tastings to assess the taste; the color intensity is irrelevant here. Once the perfect balance is reached, we take out the Meunier grapes with a net: the Rosé d'Infusion is born and will finish its fermentation in oak barrels. With indigenous yeasts Batonnage: Only when the wine needs it Liqueur de tirage: Wine from the Cuvée Rosé d'Infusion brewed with organic raw sugar. Dosage liqueur: Identical to Tirage liqueur but aged in Magnum for 18 months. Vinification and aging: Every year in barrels from the Tonnellerie de Champagne and François Frère. New kegs 20%, second fill kegs 20%, fifth fill kegs 60%. Aging of 9 months on the fine lees Sulphurisation: no sulphurisation during harvest to facilitate the work of native yeasts. After the alcoholic fermentation, a sulphurization of 2gr/hl is applied.Nikola OCT24: Moves me, although it's difficult to say exactly what it is. Perhaps the balance of freshness, flavour and this hidden profundity that Maxime also exudes. Rosehip tea, has something so sublime about it.Fabio OCT24: Not particularly fruity, but light red berries, super elegant and fine, profound, high complexity, super balance, very good! Tilman OCT24: Fresh, but not crisp, rather elegant, has real depth and structure, unusual dark flavour for Meunier, mineral-salty.

Labruyère Paradoxe Blanc de Noirs 2018
100% Pinot Noir Dosage between 0-3 g/l From the plots: Les Champs Saint-Martin, L'Espérance 5 years of bottle agingNicola OCT24: Straightforward, berry fruit, dark fruit. Elegant, puristic, but profound aromas, very fine spiciness from the wood ageing, long nutty finish.Tilman OCT24: Initially somewhat reductive and closed, but then opens up quickly. Slightly bitter, even more profound than Anthologie, structured, fresh, clear and mineral!Fabio OCT24: Somewhat closed, with more air comes fine red fruitiness, citrus peel, chalky, straightness runs through, very complex, strong finish. Giuseppe Lauria Chedredaktion Editor-in-Chief APR23: Beautiful, radiant rose gold. Characterful appearance with a wide-ranging bouquet with raspberries, red fruits tossed in butter, the finest butter pastries, all accompanied by saline undertones, a touch of Williams pear resonates. Powerful, masculine but with a lot of enamel. The mousseux is very juicy and gives the champagne an invigorating freshness and subtle tension right through to the long, tart, fresh finale. 18/20 –2030 Nicola MAI22: Strongly vibrant, long, nice wood influence, complex! Paula Bosch SEP22: This single-varietal Pinot Noir was pressed white, given 5 years to mature in the bottle and bottled without dosage. The result is a very spicy, uncompromising, bone-dry Champagne with a salty note, a powerhouse with great character. If you are looking for a link to Burgundy in Champagne J.M. Labruyere, you have the best example with Paradoxe. Despite the tremendous richness in the mouth - a whole cello concerto takes place here - each sip remains in harmony and balance, without corners and edges, the fine, compact mousse caresses the palate. The animating acidity makes the Paradoxe an ideal food companion from caviar to langoustine, Breton turbot in Beurre Blanc with morels to a zabaglione with crepes and caramel ice cream. What distinguishes this champagne is its seasoning full of character. Moritz OCT22: The beautiful rose gold is radiant in the glass. The paradox is characterized by an angular dark berry fruit. The mousseux is very juicy and gives the champagne a pleasant freshness. The finish is long and slightly tart, which gives the wine even more excitement.

70% Pinot Noir, 30% Chardonnay From three Grand Cru plots in Verzenay and Verzy Min. 6 years bottle ageing Dosage: 5g/lTilman OCT24: Like the racing bike depicted on the label, this cuvée is grippy, slender, elegant and racy. Yet red fruity and with a fine yeast flavour, wonderfully balanced.Fabio OCT24: Ripe citrus, black bread rind, delicate fine oxidation, very elegant & complex, fine perlage on the palate, ripe red fruit, beautiful saltiness, a pleasure to drink with a lot of sophistication. Nicolas: "Arsène is the first name of the son of Jérôme, our friend who has worked with us for many years now.Baptizing a cuvée Arsène means integrating Jérôme a little more into the history of our house. On the label, Arsène is very elegant, like the vintage it characterizes. He is tall and his posture oscillates between rigor and relaxation, attesting that this wine, despite its Grand Cru origins and its vintage, remains accessible and supple. The cane is an instrument aimed at enhancing the elegance but also the balance of the cuvée.As for the bike, connoisseurs will notice that it is an old racing bike, (equipped with its cans of course) affirming the racy side of this great vintage."
