Eric Rodez is known as the master of assemblage and now he had to trust that the single parcelle contains all a great champagne needs. And these brand new champagnes are really grand. One of the most elegant, deep and complex champagnes we tasted from this domain so far. His son Mikhael was the driver to this initiative: "It's time father", he said...

100% ChardonnayDosage 3g/lFrom Avize (Grand Cru)Aged in stainless steel & wooden barrelsBottle ageing: 3 yearsUnfined and unfilteredNicola FEB24: Aromatic, creamy, full-bodied with a straightforward finish, has a slightly matured aspect due to the oxidative style.Moritz FEB24: More mature than the last releases: Wonderful aromas of hayflower, white almond, and fresh garden herbs. Despite the light, well-integrated oxidative notes, it comes across quite fresh and straightforward, creating a wonderful symbiosis between nose and palate.Nicola JUN22: Very nicely developed, great body, complex, cleanly polished + accessible, great drinkability. Becomes richer and more opulent when open and even more drinkable with time! With a beautiful silky honey note and a nutty, brioche-like finish.

100% ChardonnayDosage 2g/lFrom Cramant (Grand Cru)Aged in wooden barrels for 9 monthsBottle aging: At least 5 yearsOld vinesNicola FEB24: Minimal sherry notes, mature, with a finish of salted caramel.Moritz FEB24: Despite its beautiful maturity (slight oxidative notes), the Cuvée Constantin seems quite austere. There are aromas of wet stones, citrus fruits, but also white almonds and salted caramel. On the palate, the aromas from the nose seem a little more tart due to the acidity. The long finish leaves a beautifully chalky/mineral aftertaste, which gives the champagne even more grip and length.Nicola JUN22: Perhaps the chalkiest, most mineral of the range, but again with that beautiful ripe fruit note. Exciting, mildly spicy, complex tone. On the third day: racy, spicy notes, strong character with enormous drinkability.

Further information: http://georgeslaval.fr/les-cuvees-biologiques-2/
