De Sousa champagnes are known and sought after for their crystalline yet juicy character. Since 1999, viticulture has been carried out biodynamically, which has had a positive effect on the quality of the grapes. 2 hectares are even farmed exclusively by horse. De Sousa is excellent as an aperitif (excellent with oysters and other seafood), but the champagnes will also bring lovers of elegant sparkling wines to rapture when enjoying them "by themselves". They keep exceptionally well.
Of De Sousa's 9.5 hectares, 6.77 are planted to Chardonnay and are located in the Grand Cru villages of Avize, Oger, Cramant, Le Mesnil-sur-Oger and Chouilly (a small portion of 1er Cru is located in Grauves). The Pinot Noir share is located in Essoyes, in the Aube and a mini share in Aÿ (27 Are) and Ambonnay (21 Are). Then there is half a hectare of Meunier in Mardeuil (Vallée de la Marne, near Epernay). They have a passion for old vines, 70% of the vines are about 30 years old, the rest more than 50 years.
In the cellar is mostly aged in enamel tank, in 1992 they began to age selected vines planted with old vines in oak barriques and called the result "Cuvée des Caudalies". Since 1995 vintage, 15% new wood is used for Cuvée des Caudalies. De Sousa uses mainly natural yeasts, malolactic fermentation is performed or allowed.
In 2004, De Sousa started an additional négociant business under the label Zoémie De Sousa. For this, three ha. are purchased and processed to 30,000 bottles per year. Winemaking is the same as for its own line.
