Für unseren Champagne Character „Puristisch & Analytisch“ haben wir Tine getroffen. Sie unterstützt unser Team als Angel bei ChaCha und ist auch in unserer Boutique anzutreffen. Nebenbei engagiert sie sich mit viel Herzblut: Sie arbeitet mit obdachlosen Frauen, begleitet straffällig gewordene Männer auf ihrem Weg zurück in den Alltag und sorgt in der Opernrequisite für kreative Details. Hilfsbereit und manchmal sogar ein wenig „überbordend“ in ihren Aktionen, strahlt sie dabei eine besondere Klarheit und Authentizität aus.
Für Tine muss eine gute Flasche Champagner vor allem Spaß machen und zur jeweiligen Stimmung passen. Wenn sie sich jedoch für einen Champagne Character entscheiden müsste, dann wäre es Puristisch & Analytisch.
Puristische, analytische Champagner zeichnen sich durch Präzision, Klarheit und Geradlinigkeit aus. Sie verzichten auf Überfluss und setzen stattdessen auf Struktur, Eleganz und Tiefe. Entstanden aus sorgfältig selektierten Grundweinen, meist im Edelstahl ausgebaut und mit niedriger Dosage versehen, zeigen sie eine kristalline Stilistik, die Klarheit ins Glas bringt.
Das Ergebnis sind Cuvées, die zurückhaltend und zugleich vielschichtig wirken: straffe Säure, feine Frucht, subtil florale und würzige Nuancen. Ein Champagner, der sich Schicht für Schicht entfaltet – ideal als präziser Aperitif oder als Begleiter zu Sushi und feiner, aromatisch klarer Küche.

Im Gespräch wirkt sie ebenso klar wie leidenschaftlich. Lisa beschreibt sich als kommunikativ, pragmatisch – und temperamentvoll.
Ambitioniert & anspruchsvolle Champagner sind kraftvoll, strukturiert und komplex – Cuvées mit Tiefgang, die nicht jedem gefallen wollen, sondern Haltung zeigen. Ihr Stil lebt von Substanz, Länge und aromatischer Spannung. Sie vereinen das Beste aus mehreren Jahrgängen, profitieren von langen Hefelagerzeiten und einem gezielten Einsatz von Reserveweinen oder sogar Perpetuumreserven.

50% Chardonnay, 40% Meunier, 10% Pinot Noir Terroir: Pierry/ Moussy/ Epernay/ Mardeuil/ Dizy/ Boursault/ Vertus Soil: Mostly flinty clay on chalky subsoil Vinification: Stainless steel tank 60 %, Oak barrels 40 %, without fining or filtration. Reserve wines: 50% (in tanks and oak barrels) Two-five years aging on the lees (2 years for 0,75l, 3 years for 1,5l, 5 years for 3l). Dosage: 2g/l Nicola FEB24: Super complex and balanced, a very strong release! Moritz FEB24: Very fresh, elegant, and complex. Notes of mandarin & quince and a hint of spice give the Solessence a very pleasant tart freshness. The perlage is very fine and elegant. Lukas FEB23 (base vintage 2020): In the nose red fruit, some yellow fruit, then in the background fine yeast notes. In the mouth fresh and juicy, very nice juicy apple notes, plus hints of raspberry, blackberry and some lemongrass. Very animating with great drinkability. Tasting FEB20: Base 2017 - Rich, generous aromas despite the freshness and the low dosage (longer yeast storage compared to the past and perpetual reserve makes it so multi-layered), more balance than before, extremely versatile, winey, yet youthful, precise, balanced, floral, herbal, minerality stops, Silex in the ground, chalk flashes in the mouth, anything but an entry! Average age of the vines: 30 Years Vinification: 70% in enamel tank, 30% in old barrel, 75% with malolactic fermentation, matured for up to 7 years on the lees Domaine's entry level champagne, one that nonetheless displays a challenging complexity. Crisp & fruity (primarily apple) and nuanced. 60% Pinot Noir, 40% Chardonnay, Dosage 6g/l Nicola FEB24: Ultra strong, complex, slightly matured flavors but spot on, extremely long, multi-layered, also a bit of a stony element which makes it even more interesting. Ultra balanced. Moritz FEB24: Even with the "entry-level" cuvée, one can feel the elegance and complexity that Eric skillfully wants to encapsulate in the bottle. Everything is very delicate, not too loud, yet very present. A harmony of marzipan, roasted nuts, chalk, and a light smokiness greets the senses. The palate brings out more of the fresh, chalky flavors, which suits the cuvée extremely well. An extremely long finish ties the whole package together. What is sold as an entry-level at Maison Rodez, without overstepping, could be the pinnacle in many other houses. As always with Taillet, it has a lively and structuring acidity, which makes it light-footed. An unusual rosé with a strong character!

This Blanc de Blanc does not belong to the minimalistic, mineral-driven style, but rather is round and balanced with a touch of fragrant flowers. Complex and nuanced due in part to the barrel influence and a perfect pairing partner at the table — to more than just fish! Nicola FEB24: A slightly richer release at the moment, very generous, a somewhat noticeable influence of wood, dried fruits, brioche. Moritz FEB24: Light, but very nice reduction, nose and palate reflect each other perfectly. Salty, wet stones, white almond are predominant, with a background of some dried apricot. All very calm. Very subtle, perfectly integrated wood notes. The mousseux is round but precise, and the long finish is very chalky.

On the palate, gripping without losing elegance. Round and polished. So complex that not everything can be put into words. Despite the vintage, a splendid champagne with an extremely long finish. Air does it good. The champagne stood perfectly in the tasting.

Labruyere, you have the best example with Paradoxe. Despite the tremendous richness in the mouth - a whole cello concerto takes place here - each sip remains in harmony and balance, without corners and edges, the fine, compact mousse caresses the palate. The animating acidity makes the Paradoxe an ideal food companion from caviar to langoustine, Breton turbot in Beurre Blanc with morels to a zabaglione with crepes and caramel ice cream. With his Millésime 2014, "Mr. Meunier" Heucq demonstrates perfectly what wonderful champagnes can be made with experience and healthy grapes, even in years that are not so easy. Moritz AUG22: A wonderfull aged Champagne with super fine perlage. Right after opening you'll find aromatics that remind of morning dew in the woods. There's a lot going on. Honeydew melon, some kiwi, oyster shells, wet stones, very fine smokiness. The nose alone is very complex. The Absimilis then really picks up speed on the palate. The combination of a very rich extract and a very austere flavour is fascinating. The finish is extremely long and leaves a delicate feeling of stone powder on the tongue.
