The history of Domaine H. Billiot begins at the beginning of the 20th century, when Louis Billiot used his press in Ambonnay to produce grape juice for Mumm and Moët & Chandon. Even then, he was producing small quantities of his own champagne. It is thanks to his grandson Henri that the company transformed from a grape supplier to a grape manipulator. His son Serge took over the vineyard work in 1954 and brought the winery to its current reputation. In 2011, the reins were passed on to daughter Laetitia, whose name also bears the house's prestige cuvée.

Billiot's five hectares are all in Ambonnay and are spread over 18 plots. All but one plot is in the highest quality central part of the respective vineyard. Billiot's champagnes therefore convey the classic Grand Cru terroir particularly well: "Ambonnay produces vinous, deep and powerful champagnes," says Laetitia, "but they can also be very fine and full of subtlety and have great storage potential." H. Billiot's champagnes are mainly Pinot Noir, are not filtered and are usually dosed as Brut. This promotes vinous, full-bodied and characterful cuvées. Because they are aged in enamel tanks and the malolactic fermentation is blocked, they also have a vibrant acidity and liveliness. Laetitia's champagnes are full of flavor and at the top so complex and multi-layered that you can lose yourself in them.
