This Champagne bears the hallmark of the Pinot Noir variety from the heart of the Cumières Terroir. We aim to offer the best expression of Pinot Noir from several different plots of the Terroir each year. This Champagne owes its complexity and its substance to the chalky clay soil and then reveals an elegance that typifies the great Terroirs.Soil: clay and chalk, with fragments of flint; a selection of very early-ripening plots above Cumières (Barremonts, Demoiselles, Houtrants)Average age of the vines: 30 years Blending: 79% Pinot Noir, 15% Pinot Meunier, 6% Chardonnay
Dosage: 3g/l
VINIFICATION:Harvested and sorted by hand; pressed on a traditional Coquard wine press; only the cuvée (firstjuice of the pressing) is selected; vinification plot-by-plot to 80% in tuns, demi-muid casks andbarrels. Avoidance of malolactic fermentation.TASTING:On the nose, a coated, flattering bouquet of a complex palette of aromas of red fruits; airy, brightand vigorous in the mouth. Boasting great freshness, generous doses of strawberry andredcurrant dictate, punctuated by hints of fragrant flowers, such as peonies. It maintains a beautiful balance with a persistent finish.PAIRING:By virtue of its power, this Champagne Empreinte complements the expressive flavours ofgastronomic cooking remarkably well. Bresse chicken with morel mushrooms, quail with grapesor a fricassee of forest mushrooms harmonise perfectly with this Champagne Empreinte, servedat 11-12° C.PRESS REVIEWSJAMES SUCKLING.COM - Oct 2016 - 93/100Bettane & Desseauve 2017 : 16,5/20Guide RVF 2017 15/20Guide Gault Millau 2014 : 15/20Guide Larousse du Champagne 2014 : ****Tyson Stelzer – Australie – 2014 : 94/100Wine advocate – USA : 91/100Vinum 2013 - Allemagne : 16.5/20Stephen Tanzer’s – USA : 92/100Burghound – USA : 91/100

Andreas SEP23: So much champagne for comparatively little money! And then you can buy it with a clear organic conscience because it comes from "good" agriculture from a biodynamic producer from the Marne. Juicy, for André with 4 grams almost highly dosed and yet super balanced, fine wholemeal toast, quince bread, fine wood spice, good pressure and great length, enormously drinkable. With his Millésime 2014, "Mr. Meunier" Heucq demonstrates perfectly what wonderful champagnes can be made with experience and healthy grapes, even in years that are not so easy.
Moritz AUG22: A wonderfull aged Champagne with super fine perlage. Right after opening you'll find aromatics that remind of morning dew in the woods. With some time and airation armoas of caramelized red apples and delicate brioche notes develope. This complex Champagne developes, with some time and air, to a diverse pleasurable experience. Well suited as food companion for dishes with roasting flavours.

Paul Bara's Prestige Cuvée Comtesse Marie de France is named after the daughter of Éléonore d’Aquitaine - first produced in the 1960s for the Chez Denis restaurant in Paris. It consists of 100% Pinot Noir and is only produced in very small quantities, each bottle is individually numbered.
Age of the vines: approx. 50 years
9 years of bottel maturity
Each bottle individually numbered
Dosage: 8g/l
Tasting Note from Domaine Paul Bara: This wonderfully mature champagne reveals a deep and structured nose of juicy fruits, such as yellow peach and overripe apple. Candied notes verging on honey and fresh baking aromas then appear, with a delicious hint of praline and nougatine. Tasty and full in the mouth, with more of the pleasing aromas of the nose, as well as a hint of citrus peel and a slight peppery touch on the finish. This is a rich, full and generous wine, which will be perfect for a meal served exclusively with champagne.
Tasting FEB20: Cocoa, richness, mocha, brioche, creamy, generous, paired with 2008 freshness.
100% Pinot Noir

Laetitia Billiot: "The Essence is a special cuvee, each one contains a number, there are only 500 bottles for the 2014 release!
It's a Blanc de Noir 100% Ambonnay Grand Cru, no malolactic, no filtration, no dosage, 2 month in barrels, from our 2 best plots, more than 10.5 degrees at the press for no chaptalisation, as traditionnal as possible!"
Tasting FEB20: Still very young, very vinous and dense, nutty, spicy, smoky notes, very vinous reverberation, extremely long. Needs some air.
100% Chardonnay
Dosage: 2g/l
Our old vines in Cramant face south-east and are blessed with an exceptional terroir. They are aged between 48 and over 75 years old. Their deep root system and the diversity of the old stocks contribute to the complexity of the wine.
Since we created this cuvée in 1988, we have been explaining the difference between « Cramant » and « Crémant ». In order to avoid this confusion, we have decided to change the name : Vieille Vigne de Cramant becomes Vieille Vigne du Levant!
Indeed, Vieille Vigne de Cramant’s parcel is called « Bourron du Levant » and Levant means the East, the first sun rays in the morning. In Cramant, the Levant is very different from the vines located on the other side of the hill, West facing. The East-facing vines give particularly rich and powerful grapes, this is quite a magic place.
Vinification:
The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks and our wooden vats. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. If the year merits it, this cuvée will be bottled in July as a vintage.
No need to blend, this is a single vineyard.
Then the bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place over a period of a minimum of 5 years. Each bottle is disgorged manually 6 months before being marketed.
Tasting & Rankings
Robert Parker/Wine Advocate SEP2020 - 2011 Larmandier-Bernier Extra-Brut Blanc de Blancs Grand Cru Vieille Vigne du Levant: I'm increasingly convinced that Pierre Larmandier produced Champagne's wines of the vintage this year, and the 2011 Extra-Brut Blanc de Blancs Grand Cru Vieille Vigne du Levant only compounds that suspicion. Unfurling in the glass with a deep and complex nose of citrus zest, crisp yellow apples, smoke, warm bread, mandarin oil and oyster shell, it's full-bodied and fleshy but incisive, with huge concentration, bright acids and a long, intensely saline finish. Totally transcending the reputation of 2011, it has many of the textural properties of a great white Burgundy, married with the cut and chalky grip of Champagne's Côte de Blancs
