VAUVERSIN
Champagne Vauversin is 3 hectares and is located in the Grand Cru town of Oger, between the equally famous towns of Avize and Le-Mesnil-sur-Oger on the Côte des Blancs. The family has been involved in viticulture since 1640. In 2011, Laurent was the fourth generation to produce champagne under its own name. Laurent is a person who questions and tackles a lot when it seems important to him. He wants to create the best possible and most sensible transition, between preserving centuries of experience and new, contemporary impulses and visions.
The first thing he tackled was the conversion to organic viticulture - in 2014 the winery received certification, making it the first organic company in Oger. Biodiversity in the vineyard was particularly important to him.
You can see a multitude of herbs and shrubs when you enter the vineyards of Vauversin. Laurent believes that when a positive energy is cultivated in the soil and the vines, it is carried over to the people who enjoy his champagnes. He is a calm, quiet guy and his champagnes are exactly the same: poetic, quiet, floral, subtle, light-footed, almost ethereal, calm, calm but also somehow playful, nothing crass, wild, but also straightforward, clean and long ... !
All champagnes are vinified with local yeasts from the wine and are not filtered. They contain very little sulfur (less than 35mg / l). The riddling takes place by hand in the natural cellar.
