Nature loving Winemaker with a feeling for Terroir
The Piollot winery is located in Polisot, a tiny town in the Aube, and is run by Roland Piollot and his wife Dominique Moreau, who is also the owner of the renowned Marie Courtin winery. For more than 50 years, the Roland Piollot family has been trying to bring out the authentic terroir of the vineyards and plots that are all in Polisot.
During this time, the vines in the vineyard were not renewed by buying new clones, but rather certain vines with positive properties in the existing vineyard were selected and offshoots were taken from them. These included some very old vines of the Pinot Blanc grape variety, which 99% of all winemakers sorted out a long time ago and converted into vineyards for Pinot Noir, Chardonnay and Pinot Meunier. In the meantime, the so-called forgotten grape varieties are on the rise again.
The winery has been organically certified since 2009. Great importance is attached to the natural preservation of the health of the vines. Recently, the base wines have been expanded in wood and only naturally produced yeasts are used. Roland and Dominique want to create a holistic system in which the vines and terroir can express themselves as it comes from nature itself and as it is typical for the Côte des Bar region.
