Maxime Oudiette started his own micro-production in 2012 at his parents Sylvie and Pascal's winery in Beaunay in Coteaux du Petit Morin. His parents have been growing champagne on 3 hectares of vineyards since the 1980s. In 2015 Maxime harvested his first own wine. The first bottles under the Oudiette name were sold in November 2020. Having previously gained some experience at Champagne Thuillier and Jacques Selosse, he sees them as a mentor who helped him find his own signature.
The winery was initially founded by Léon and Gabrielle Aubert after the First World War in 1920. Her daughter Arlette and her husband André Oudiette built up the winery and passed it on to their two children. Pascal Oudiette, the eldest, and his wife Sylvie also dedicated their lives to cultivating the vines and developing the winery. In 1980 the first own wine press was installed.
Maxime sees soil, vines and wine as a comprehensive symbiotic ecosystem. He wants his wines to taste where they were grown (plots, locations, terroir). He uses a balanced combination of organic, biodynamic, vine forestry and permaculture techniques. Every action on the vines and on the base wines must be coordinated with the climatic and biological conditions in order to understand exactly what each plot wants to express for itself. The grapes are pressed and vinified per plot to understand the influence of the soils on the wines.
