Champagne Salmon was only founded in 1958 and is now run by Olivier Salmon and his son Alexandre, the third generation. The winery is located in Chaumuzy, in the Vallée de l'Ardre, a sub-region of the Marne Valley (20 km In Chaumuzy, 20 km southwest of Reims). Salmon is a member of the Club de Trésor de Champagne, a winegrowers' association that is committed to particularly high quality and whose trademark is the bulbous Special Club bottles.
The main grape variety is Pinot Meunier, which they specialise in. Salmon is also one of the first wineries in the Club Trésor de Champagne to release a pure Pinot Meunier Special Club. The ten hectares of vineyards are partly farmed with a horse.
The wines all undergo malolactic fermentation and are aged in enamel tanks (entry-level wines) or large bariques (high-end qualities). Without submitting to the fashion of brut nature, the two winemakers gradually reduce their dosage.
What also makes this family of winegrowers special: they devote themselves professionally to hot-air ballooning and regularly take part in international competitions. This passion is also captured on the labels of the champagnes.
