A potpourri of sour cherry, red apple, and plum jumps out at you. On the palate, everything appears a bit lighter and incredibly juicy. Vincent Bliard Eternel Optimisme - Bio
100% ChardonnayDosage 1g/lChardonnay from Hautvillers (Premier Cru)Matured in wooden barrels for 1 yearBottle ageing: 5 yearsNo fining, no filtration, minimal addition of sulphurNicola Oct25: Base 18: somewhat fresher, creamier, and softer than the Fondamenteaux, the aromas unfold beautifully, fan out, and then melt in the mouth into a wonderful moment of well-being. Subtle bitter notes in the finish add sophistication and further character.Nicola FEB24: A very strong release, vibrant, fresh, dynamic, lively, captivating, aromatic elegance.Moritz FEB24: An incredibly complex Chardonnay! The nose is voluminous yet delicate. Aromas of white chocolate & caramelized butter are underscored by a fresh, fine etherial quality. The palate is much fresher than the nose suggests. Mint and lemongrass are accompanied by almond blossom and a fine light spice. The round body fills the entire mouth, while the firm acidity provides the necessary backbone. The finish is endlessly long, leaving a taste of wet stones. A play of aromas that leaves nothing to be desired. The champagne benefits from being allowed to breathe a bit.Moritz OKT22: The Eternel Optimisme is by no means a lean, taut Blanc de Blanc. Even the nose promises body. Buttery aromas complemented by a light caraway spice, orange zest and a light green herbaceousness make the wine incredibly complex and interesting. The flavour profile continues on the palate and is rounded off by a very long finish.

Robert Moncuit Les Grands Blancs
100% Chardonnay From two Grand Cru terroirs: Le Mesnil, Oger Blend of two consecutive vintages 10 months aging in wood without battonage Unfiltered 2-3 years bottle aging Dosage: 0g/l Malo: Yes Great introduction to the Côte des Blancs! The Chardonnay grapes come from two Grand Cru terroirs: Le Mesnil and Oger. An ideal combination, according to the winemaker Pierre Amillet, because Le Mesnil is very firm and acidic, a little softer Ogre. Tasting: Very fine character; light biscuit and delicate smokiness on the nose, lively and wonderfully fresh on the palate.

Maison Lefébure Nos esprits libres & contents
70% Meunier, 30% Chardonnay Dosage: 3g/l From two plots in Petit Morin (age of the vines 70 years) Fermentation and aging in wood (11 months on the fine lees without battonage) Spontaneous malolactic fermentation Hand riddled Disgorgement a la volée"Nos esprits libres et contents" is a song by the 17th century French court composer Antoine de Boësset. Nicola NOV23: Incredibly juicy and "gschmackig", with a beautiful finish of yeast & brioche, long nutty aftertaste. Great multi-layered fruit, extremely pleasant. Moritz OKT22: Rustic-modern describes the Nos Libre Conton pretty well. A vinous body and aromas of speculoos meet a coniferous forest etherealness and wonderful minerality. Despite the incredible complexity, the wine remains accessible and has an incredible drinking flow. A tart, fruity finish lingers forever in the mouth and invites you to dream. Nicola JUL22: Herbal-spicy nose, apricot, plum, rich, great food companion, dark berries, fresh leaves, has pressure, ripe red-cheeked apple, something is stirring here.

Vauversin Orpair 2021 - Bio
100% Chardonnay Dosage: 3g/l 3 years of bottle maturity 12 months aging in used oak All champagnes have been vinified with indigenous yeasts and with no filtration. They are low in sulfite (less than 35mg/l)! Riddling by hand in natural cellar! Tilman FEB24 (vintage 2019): Floral-frischer Beginn, dann mit leicht oxidativer Aromatik immer komplexer werdend, mit schönem Zug und würzigem Finish. Tasting JUL21 (base 2016): powerful and spicy, lots of power, nice use of wood, expressive, exotic aromas, open aromatics but not too ripe, subtle spiciness, long finish. Tasting FEB20 (base 2014): 2014 has less acid than 2013, which makes it a bit more accessible, the wood aroma is beautiful, extremely long, nutty finish. High tension, like a whole feature film so complex, super nice spiciness - but rather delicate spiciness, prancing length. Tasting JUN19 (based on 2013): very independent, ethereal, floral, calm but resounding. Clean and gentle, yet powerful. Aromas cannot be grasped, with every sip of new flavors, always extremely harmonious. Light-footed, very long, somehow poetic. The acid is medium-strong, but still gripping, then melts off nicely, so that you catch up with the next sip. If he breathes longer he gets very delicate, extremely charming notes of milk candy - addictive potential!

On the palate, however, surprisingly fresh, with flavors leaning more towards grapefruit. After every sip, you immediately crave the next one.Nicola FEB24: Warm, ripe release, dried fruits, brioche, spicy fruit, yet despite the richness, there's something very fresh about it.
