The dosage, i.e., the residual sugar content in champagne, has a significant influence on its flavor profile and how well it pairs with food. 50% Chardonnay, 40% Meunier, 10% Pinot Noir Terroir: Pierry/ Moussy/ Epernay/ Mardeuil/ Dizy/ Boursault/ Vertus Soil: Mostly flinty clay on chalky subsoil Vinification: Stainless steel tank 60 %, Oak barrels 40 %, without fining or filtration. Reserve wines: 50% (in tanks and oak barrels) Two-five years aging on the lees (2 years for 0,75l, 3 years for 1,5l, 5 years for 3l). Dosage: 2g/lTilman MAR26 (B22): Open-hearted release, beautifully warm and inviting on the nose, lively and slightly elegant bitterness on the palate, grippy, very good length with fine salty minerality.Nicola MAR26 (B22): Beautiful red, sometimes cool yellow fruit, grippy, straight, red fruit, mineral, slightly earthy. Nicola FEB24: Super complex and balanced, a very strong release! Moritz FEB24: Very fresh, elegant, and complex. Notes of mandarin & quince and a hint of spice give the Solessence a very pleasant tart freshness. The perlage is very fine and elegant. Lukas FEB23 (base vintage 2020): In the nose red fruit, some yellow fruit, then in the background fine yeast notes. The nose is dominated by a pithy dark sour cherry, paired with a subtle green bitterness that creates a beautiful balance. With a little air, notes of gooseberry can be found. Great fresh fruity champagne.

An excellent Blanc de Blancs that is a pleasure to drink. Still full-bodied on the palate with a long finish. I love it!Nicola FEB24: Warmer, charming release, very pleasant to drink, extreme drinkability. Moritz FEB24: Rounder and warmer than 2019. Nice yellow fruitiness on the nose, on the palate more pear and quince. Everything is nicely wrapped and balanced. The firm acidity provides the necessary backbone.
