The dosage, i.e., the residual sugar content in champagne, has a significant influence on its flavor profile and how well it pairs with food. Larmandier-Bernier Chemins d’Avize 2016 - Bio
100% Chardonnay Dosage: 2g/l LES CHEMINS D’AVIZE come to enrich the list of our single-vineyard champagnes. We began this approach in 1988 with VV de Cramant, then completed in 1995 with Terre de Vertus and in 1999 by the Rosé de Saignée. We know for many years that Avize is worth a single vineyard cuvee. In 2009, we bought a smaller press so that we can now separate the juice from our 2 Avize vineyards. Vinification: The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks and our wooden vats. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. If the year merits it, this cuvée will be bottled in July as a vintage. Then the bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place. Each bottle is disgorged manually 6 months before being marketed. Extremely vibrant. The palate has richness of fruit with white peach and apricot flavors. Sturdy structure supports ripe and concentrated fruit. Grape maturity is expressed at an elite level here – a gift of the terroir and its interpreters. The acidity is striking, driving a deep, sorbet-like finish. Drink now. WineAdvocate/Robert Parker - September 2020 || 96 points - Disgorged in October 2019, Larmandier-Bernier's 2013 Extra-Brut Blanc de Blancs Grand Cru Les Chemins d'Avize is showing brilliantly, unfurling in the glass with a lovely nose of citrus oil, fresh apricot, peach and pear, complemented by hints of fresh walnuts and almond paste. Full-bodied, deep and vinous, it's layered and elegantly muscular, with a concentrated core of ripe fruit, racy acids and a long, mineral finish. Pierre Larmandier invariably excels in cool, late growing seasons, so the 2013 vintage was perfectly adapted to his talents. But this cuvée is simply amazing. It captivates you with its laser-sharp polish, yet it has such a wide range of aromas that it is not sparse. Then there is a minute-long finish. Unique! It's still a bit young at the moment and will continue to improve, but even now, as I said, it's absolutely impressive.

Tarlant L’Étincelante 2002

Disgorgement September 2018 Bottle aging: 15 years Tasting: wow! The fifteen years on the lees until disgorgement in September 2018 make for a monumental wine. Its expression of character, origin, identity and great elegance is unique. The nose reveals toasted hazelnuts and almonds. The enormously long yeast storage spreads an absolute sense of well-being through the smell alone. Yellow and green apples in all facets. Brioche spread with butter. Almond biscuits and shortcrust pastry. Your mind is totally lost. Lemon tart with burnt meringue. And there is always a wall of pure chalk and filigree behind the countless aromas and nuances. Can't wait for the first sip. As soon as he starts drinking, he really gives it gas. A great combination of maturity, yeast autolysis and minerality. The mousseux creates the first moments in a creamy and opulent manner. As soon as the melt has reached its peak, its balanced acidity sets in and ensures a tightrope walk. The acid harmonizes brilliantly with the incredible minerality. Lemon and apple aromas provide the freshness kick. The maturity of the wine cannot be denied. But matured with dignity and in this construct just the right dose. The mouthfeel is elegant and delicate. The reverberation sticks endlessly on the palate. Sensationally good wine.

Lointier Causica Rosé de Saigneé 2022 MAGNUM
100% Pinot Meunier from the oldest vines Dosage 1.5g/l brown limestone & clay no herbicides, no insecticides 50% used barrique (from the own forest) & 50% amphora over 11 monthsno malo / filtration / fining Causica comes from the oldest Meunier vines of the Lointiers. Half of the wine was aged in used barriques whose wood came from their own forest. The other half aged for eleven months in amphora. No malolactic fermentation, no fining, no filtration. The yeast aging on the bottle is at least 22 months. The name Causica derives from a subspecies of honeybee that has a special hairiness - similar to the leaves of Pinot Meunier. Causica smells invitingly of cookie and peach cream, with an exciting smoky undercurrent to everything. The palate shows plenty of structure as well as a fine red berry quality that lingers long on the grippy finish.
