First fermentation in temperature-controlled steel tanks, subsequent expansion on the fine lees for 8 months in Fuder barrels and steel tanks.
For the second fermentation, 30% reserve wines from a Solera that began in 1986 and 70% wine from the current vintage are used.
Tasting SEP20: Ripe fruit basket, ripe, full-bodied fruits with a great acid structure, so that you don't get full, I reminded you of an Austrian emerald (Veltliner or Riesling) or a Chassagne Montrachet with bubbles. It then melts towards the back and becomes firmer, cooler. Very nice contemporary!
