Very exciting, also different perlage, has a different dimension than fruit and structure, stony, cool flavour. Tilman MAR25: Darker, deeper, smokier, creamy and soft at the same time, difficult to put into words, opens up a completely different dimension, stony, mineral.Tasting: Fresh fruits: wild strawberries, quince, nectarine, ripe lemon. Crisper and fresher than Papillon and Cognaux, but becomes softer, nuttier and spicier on the finish thanks to the Pinot Noir. Spans a great arc, both straightforward and generous. Tasting: citrus fruits, quince, vineyard peach, fennel, mint and liquorice. Taste explosion and good length in the mouth, subtle bitter note and a lot of minerality in the finish.

50% Pinot Noir, 50% Chardonnay Dosage: 6g/l 6 month in oak barrels  In 1999 the house created its second Tête de Cuvée, named for Laetitia's daughter, Julie. It is created from equal parts Pinot Noir and Chardonnay. Usually a single vintage champagne, although it is not marked as such on the label. The barrel-matured cuvée has a distinctive and individual character. Pairs beautifully with many meat dishes, smoked foods, and flavorful dishes — often called a "fireplace champagne."

100% Pinot NoirSingle plot in Avirey-Lingey with Kimmeridge soilDosage: 0g/lVinified in BarriqueBottle ageing: 3 yearsUnfined, unfiltered and without added sulphitesTilman FEB25: Typical Dosnon light reduction, slightly smoky, with very subtle vanilla on the nose. Fresh on the palate, but still with great, restrained fruit. Very mineral Pinot Noir interpretation, clear chalky impression. Enormous length even now, superbly balanced between the juicy fruit flavours and striking mineral acidity. 2019 is really fun! Two days later from the same bottle: the reduction and smokiness have almost disappeared, but the wood is more prominent, but here too it is not intrusive, but always a great symbiosis with the light red fruitiness. The minerality also comes through even more strongly, promising great potential!

It’s blanc de blancs stained duper pale salmon with a dash of pinot noir, purchased from a grower, because Gimonnet’s vines aren’t up to making red wine. It upholds its mantra of sustaining the mouth feel, persistence and minerality of the Côte des Blancs with great accomplishment. Classic Gimonnet elegance is touch with the lightest reflections of red cherries and strawberry hull, lifted with pretty rose petals notes. Delightfully restrained, refreshing tense and consummately mineral – the ultimate aperitif rosé.”91/100 –Web guide Flavours from France – février 2013

Lukas FEB23 (base vintage 2020): In the nose red fruit, some yellow fruit, then in the background fine yeast notes. In the mouth fresh and juicy, very nice juicy apple notes, plus hints of raspberry, blackberry and some lemongrass. Very animating with great drinkability. Tasting FEB20: Base 2017 - Rich, generous aromas despite the freshness and the low dosage (longer yeast storage compared to the past and perpetual reserve makes it so multi-layered), more balance than before, extremely versatile, winey, yet youthful, precise, balanced, floral, herbal, minerality stops, Silex in the ground, chalk flashes in the mouth, anything but an entry! JM Seleque: "The Identity of our Winery. A wine of friends, for sharing. The expression of our style, pure and fresh, in all circumstances."

Dosnon Récolte Noire
100% Pinot Noir Fermented for 10 months in barrique followed by another 24 months of maturation in barrique Dosage: 3g/l Muscular character, significant yet well integrated barrel influence. Strength and spice blend with a chalky minerality and complex finish lift this champagne from a casual drink to a lasting adventure. Think Nat King Cole: Unforgettable.Wine Spectator 201593P. Vivid flavors of ground spice and graphite are layered with hints of crunchy pear, crushed white raspberry fruit, lemon zest, spun honey and chamomile in this mouthwatering Champagne, which is refined, chalky in texture and harmonious, with a long, lingering finish of rich grilled nut, coffee and spice.   Wine Spectator, November & December 2016: 92P. A pure note of crushed black cherry is accented by details of ground ginger and anise that ride the creamy mousse, showing hints of candied kumquat and brioche. Long and vibrant, with a snappy, mineral-tinged finish.

Dosnon Récolte Noire Brut Zero
100% Pinot Noir Fermented for 10 months in barrique followed by another 24 months of maturation in barrique Dosage: 0g/l Variant that expresses the Pinot Noir expression even more unvarnished due to the lack of dosage. Straightforward, gripping, powerful with strong, spicy notes due to the wood influence. Grippier, more elegant and more puristic than the Recolte Noir with Dosage. A champagne for advanced lovers of demanding, firm wines. Nicola OCT23: Smoky nose and great Burgundian style: well integrated wood, nutty complex reverberation. Strong! Nicola FEB23: Great grip, draw, racy, ultra fine and precise wood finish, spicy, minimally herbaceous.
