So I adapted the work at the parcel and I cut earlier to do a 10 degrees Coteaux but with a stunning fruit and richness. Very aerial and addictive.

JM Seleque: The Soliste range presents wines from our village of Pierry, from one plot, from a single varietal and vintage. We have chosen them for their identity, their quality and their specificity - the best representations of our terroir. You already know Soliste Meunier, Soliste Chardonnay, Infusion Meunier Rosé and this year we introduce Soliste Pinot Noir. Soliste Pinot Noir comes from our "Les Gayères" property, located in the upper part of the west-facing central slope of Pierry. It was planted by my father in 1974 on cool Sparnacien clay soil, a distinctive soil of the region that contains freshwater quartz stones (formerly sought after in the production of millstones) and contributes to the distinctiveness of Pierry's wines. The Pinot Noir ripens late here and benefits from the setting sun to refine its aromas at the end of the harvest. This property also supplies the red wine for our Solessence Rosé Cuvée.

100% Chardonnay Dosage: 0g/l No blending for this single-cru Champagne: Chardonnays only, coming from the vineyard plots of Les Barillers and Les Faucherets situated mid-slope in Vertus, facing south-east. One terroir only and one vintage only. Vinification and maturation: The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks, our wooden vats and our stainless-steel tanks. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. If the year merits it, this cuvée will be bottled in July without any blend with other years - it is a vintage - or other terroirs - it is a single vineyard. Then the bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place over a period of at least 5 years. Each bottle is disgorged manually 6 months before being marketed. This wine is non dosé (no sugar added), in order to respect its purity from beginning to end. Notes of mandarin & quince and a hint of spice give the Solessence a very pleasant tart freshness. The perlage is very fine and elegant. Lukas FEB23 (base vintage 2020): In the nose red fruit, some yellow fruit, then in the background still fine yeast notes. In the mouth fresh and juicy, very nice juicy apple notes, plus hints of raspberry, blackberry and some lemongrass. Very animating with great drinkability.

100% Chardonnay Dosage: 0g/l Peter Liem: In 2004, Gautherot began bottling a pure chardonnay called Blanc d’Argile, from the Biaunes vineyard. The vines here are young, having been planted in 2000, and unlike Vouette, which faces south, Biaunes has a western exposure, meaning that the grapes take a long time to ripen. Yields tend to be very low (a mere 15 hl/ha in 2004, resulting in only 1,100 bottles being produced), as Gautherot prunes the chardonnay here to only five bunches per vine, and this is well-reflected in the ample, mouth-filling character of this wine.

100% Pinot Noir From old vines in Vertus Dosage: 3g/l Vinification:This technique is rarely used in Champagne: the Pinots are partly destemmed and left to macerate for two to three days before the 'bleeding' is carried out. Then come the natural alcoholic fermentation (indigenous yeast) in an enamel-lined steel vat and a concrete egg, the malolactic fermentation and the maturation on the lees for about a year. The bottling takes place end of July. After being aged a minimum of 2 years in our cellars, the wine is disgorged 6 months before being marketed with a discreet dosage (2 grams of sugar).
