Pinot Noir, Pinot Meunier, Chardonnay, Arbanne und Petit Meslier - planted in 2004 in one plot together and all vinified together!
In honor of Cumieres terroir: Clay-muddy ground with flint stones. The bed rock consists of sandstone with calcareous marne.
The grounds are plowed with the horse to ease the penetration of water and air, so we conserve a very healthy terroir.
The amount of each collected grapes varies each year. All grapes are harvested and pressed together. The natural vinification with yeasts of the grapes is done in enamelled steel tank, no wood is used in order to remain neutral.
In addition this Champagne is a multi-vintage. Each year we bottle approximately 1200 magnums as reserve wines from this plot “with small bubbles” (3 kg of pressure instead the normal 6 kg). Every year we taste these magnums (we started in 2008) and the base wines of the year and we try to find out the best blend. Then each year 1000 bottles are being created.
The tirage is done with a cork and not a capsule in order to preserve the tradition and the purity and the detail of this technique.
This Champagne does not go through malolactic fermentation or filtration.
No dosage is being added to preserve the purity and the minerality of the Soil.
The bottles are numbered and they are very limited.
