In 2003 the decision was made to plant Fromenteau, Arbanne and Petit Meslier together with the classic grape varieties in one plot. The vineyards lie on loamy and sandy limestone soils, some with flint in the municipality of Chavot-Courcourt. No use of pesticides or other chemical agents. Manual harvest with optimal ripening of the grapes, spontaneous alcoholic fermentation in at least 10 year old barriques from Burgundy for 6 months with regular stirring of the yeast ('bâtonnage').
