The Gallimard family has been producing champagne in Les Riceys for 6 generations. Les Ricey is located in the Côte des Bar, in the heart of Champagne. Today Didier and his son Arnaud manage the 12 hectares of vineyards. Treating nature and the environment with respect is very important to them. Most of the work takes place in your vineyard, so that only minimal interventions in winemaking have to be made later in the cellar.
85% Pinot Noir and 15% Chardonnay grow on your unique terroir, to be later matured in oak barrels and egg-shaped clay amphorae. The Solera process is also occasionally used in their cuvées.
Thanks to the constant temperature and ideal humidity, the stone vault from the 17th century offers optimal aging conditions for your champagnes, which can mature there in peace for over 5 years.
However, the slim and elegant style is always in the foreground and has inspired a growing fan base in recent years.
All bottles are disgorged at Gallimard using the à la volée method. Literally translated, this means "flying disgorgement", since here the yeast storage is not frozen as in disgorgement à la ice cream, this method is also called "warm disgorgement". In addition, all processes are carried out with the help of gravity without the use of pumps that are used this is the gentlest treatment for the wine.
Les Riceys is also considered the sole owner of the three appellations Champagne, Coteaux Champenois and Rosé des Riceys, which was already highly valued by Louis XIV.
