100% Chardonnay Dosage: 2g/l LES CHEMINS D’AVIZE come to enrich the list of our single-vineyard champagnes. We began this approach in 1988 with VV de Cramant, then completed in 1995 with Terre de Vertus and in 1999 by the Rosé de Saignée. We know for many years that Avize is worth a single vineyard cuvee. In 2009, we bought a smaller press so that we can now separate the juice from our 2 Avize vineyards. Vinification: The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks and our wooden vats. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. If the year merits it, this cuvée will be bottled in July as a vintage. Then the bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place. Each bottle is disgorged manually 6 months before being marketed. This is a cuvée I wanted to do since a long time. I wanted to reach something extreme, kind of how "Rated X" was extreme, but in another way here. Here it is a strong, expressive Meunier, very pure with no dosage and a soft oak aspect. It has something to do what the gravel gives to the wine, which gives smoky notes a the end. The sparkling is subtle but the wine is strong. For this wine I wanted to show a stage diving picture, I finally received some stills from a photographer who is hard to get, because he lives on a boat.Nicola JAN26: Very woody, opulent, smoky, oxidative, spicy, somewhat acacia-like, then the tannins come through. Very distinctive.

Its expression of character, origin, identity and great elegance is unique. The nose reveals toasted hazelnuts and almonds. The enormously long yeast storage spreads an absolute sense of well-being through the smell alone. Yellow and green apples in all facets. Brioche spread with butter. 100% Pinot Meunier from the oldest vines Dosage 1.5g/l brown limestone & clay no herbicides, no insecticides 50% used barrique (from the own forest) & 50% amphora over 11 monthsno malo / filtration / fining Causica comes from the oldest Meunier vines of the Lointiers. Half of the wine was aged in used barriques whose wood came from their own forest. The other half aged for eleven months in amphora. No malolactic fermentation, no fining, no filtration. The yeast aging on the bottle is at least 22 months. The name Causica derives from a subspecies of honeybee that has a special hairiness - similar to the leaves of Pinot Meunier. Causica smells invitingly of cookie and peach cream, with an exciting smoky undercurrent to everything. The palate shows plenty of structure as well as a fine red berry quality that lingers long on the grippy finish.
