Oudiette Rosé d'Infusion Vendange 2021
98% Chardonnay 2% Meunier From the individual layers: "Les Gras d'Huile" - Chardonnay - south-east exposure"Les Cormonts" - Meunier - southern exposure Dosage: 0g/l Maxime: The Rosé d'Infusion started with a simple idea: to transfer the method of tea infusion to winemaking. After pressing, we wait for the Chardonnay juices to ferment and then we pick the most beautiful Meunier grapes from the “Les Cormonts” plot. The Meunier grapes are then carefully destemmed by hand to avoid damaging the seeds. Then we pour the Meunier grapes into the Chardonnay must. From then on, we control the infusion several times a day through blind tastings to assess the taste; the color intensity is irrelevant here. Once the perfect balance is reached, we take out the Meunier grapes with a net: the Rosé d'Infusion is born and will finish its fermentation in oak barrels. With indigenous yeasts Batonnage: Only when the wine needs it Liqueur de tirage: Wine from the Cuvée Rosé d'Infusion brewed with organic raw sugar. Dosage liqueur: Identical to Tirage liqueur but aged in Magnum for 18 months. Vinification and aging: Every year in barrels from the Tonnellerie de Champagne and François Frère. New kegs 20%, second fill kegs 20%, fifth fill kegs 60%. Aging of 9 months on the fine lees Sulphurisation: no sulphurisation during harvest to facilitate the work of native yeasts. After the alcoholic fermentation, a sulphurization of 2gr/hl is applied.Nikola OCT24: Moves me, although it's difficult to say exactly what it is. Perhaps the balance of freshness, flavour and this hidden profundity that Maxime also exudes. Rosehip tea, has something so sublime about it.Fabio OCT24: Not particularly fruity, but light red berries, super elegant and fine, profound, high complexity, super balance, very good! Tilman OCT24: Fresh, but not crisp, rather elegant, has real depth and structure, unusual dark flavour for Meunier, mineral-salty.

Eric Rodez Cuvée des Grands Vintages - Bio

Significant influence from Krug Grand Cuvée, a masterpiece of nuanced, subtlety and complexity. Balanced with the highest level of elegance, and not a trace of overcompensation from strength. A complexity requiring both time and attention. 70% Pinot Noir, 30% Chardonnay, Dosage 4g Nicola FEB24: Balance and profound harmony and complexity at its best. Vibrating sensuality, ultra long-lasting. Insane nutty resonance. Moritz FEB24: The Grands Vintages cuvée is very calm and profound. A fine smokiness, light brioche notes, and zesty aromas stand balanced in the glass. The acidity is gripping yet gentle (if that makes sense). The perlage dances over the tongue, and flavors of clementine and salt lemon provide that certain grip. The finish? Ultra-long. The hairs on your arms stand up with each sip. A champagne with a goosebump factor. Jacques Lassaigne Le Cotet
100% Chardonnay Dosage: 0g/l 10-20% reserve wines from up to 4 vintages Vinification: 70% in steel, 30% in oakUnfiltered and unfined The vineyards are all located at Montgueux, between the Côte des Blancs and the Côte des Bar in the very south of Champagne, on a chalk cliff. Le Cotet is a small plot facing east that Jacques Lassaigne planted between 1964 and 1967. Since 1999, his son Emmanuel Lassaigne has been vinifying the wines on 4.7 hectares of his own property and 1.5 hectares of purchased grapes from trusted winemakers that meet Emmanuel's quality standards. The chalk soil is already fully developed 10 cm below the surface. The average age of the vines is 49 years, no use of pesticides or other chemicals, Guyot vines, late manual harvesting when the grapes are optimally ripe, soft pressing in a traditional basket press, spontaneous alcoholic fermentation on the lees, of which 1/3 in barriques and 2/3 in stainless steel tanks, malolactic fermentation is not avoided, no sulphurisation until bottling, ageing on the lees for 12-14 months depending on the vintage in partly new and used barrels, The base wines are bottled without fining and filtration. Bottle fermentation sur lattes of 3 to 4 years, then by hand à la volée.
