Description of Sebastian Bordthäuser about 2016: Nose: The Shaman by Champagne Marguet from the 2016 vintage has been on the lees for around two years and entices with a richly filled display: yeast braid, brioche and pretzel biscuits as well as a generous piece of butter outline the notes of autolysis, which are enhanced by fine notes of apricot with increasing ventilation in the glass . Stoved apples follow, which are accompanied by herbal spices with aromas of sorrel and Giersch. Grounded through the obligatory ground oyster shell, the nose can look forward to the first sip. Mouth: With a creamy texture and small-sparkling Mousseux in the first taste, it is initially a bit quick-tempered, which can be attributed to the short time after the disgorgement and will soon go away. The bread notes of sourdough and pretzels of pretzels are aromatically reflected in the nose. On the palate it is precise but by no means leptosome, but with a good juice and joyful appearance. They are low in sulfite (less than 35mg/l). Riddling by hand in natural cellar! Tasting JUL19: More power, more acid, a little tannins, very long, again the ethereal, structure, finesse. Almost a bit young at the moment. Tasting FEB20: Burgundian, straightforward, very complex, austerity and still character, salty, Unami, nice nutty finish, 4 years in bottle, a lot of pressure on the palate not strict. Tasting JUL21: very nice aromatic fine nose, tight, dratig, straight, light creaminess, light caramel note, very long finish, not too strict. Nicola JUN22 on a very hot day: Relatively open, lots of body, almost vinous, tight, mineral, salty at the back.

Larmandier-Bernier Longitude - Bio
100% Chardonnay Dosage: 3g/l 40% Reserve Perpetuelle At least 2 years of bottle maturity Previously, this cuvée had gone under the name of “Blanc de Blancs” since the beginning of the 20th century. It is made exclusively from our Chardonnays grown on the Côte des Blancs: Vertus, Oger, Avize, Cramant, which form a line close to the 4th meridian. “Longitude” is also an allusion to the length and the very pure, frank and mineral style of these great terroirs, where the chalk is very close to the surface. Vinification and maturation:The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks, our wooden vats and our stainless-steel tanks. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. The blending and the bottling are carried out in July. The bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place over a period of more than 2 years. Each bottle is disgorged manually 6 months before being marketed. The dosage is 3 grams per litre (extra-brut!).

Terroir: Le noyer St Pys, les Morins, les Genettes, les Champsaults, Les Secs, Les Bermonts, Les Crayères, les Agusons, les Cheminots. This Blanc de Blanc does not belong to the minimalistic, mineral-driven style, but rather is round and balanced with a touch of fragrant flowers. Complex and nuanced due in part to the barrel influence and a perfect pairing partner at the table — to more than just fish! Nicola FEB24: A slightly richer release at the moment, very generous, a somewhat noticeable influence of wood, dried fruits, brioche. Moritz FEB24: Light, but very nice reduction, nose and palate reflect each other perfectly. Salty, wet stones, white almond are predominant, with a background of some dried apricot. All very calm. Very subtle, perfectly integrated wood notes. The mousseux is round but precise, and the long finish is very chalky.

Terroir: Les Beurys du bas, Les goisses, les secs, les fournettes, les genettes, les bas touret, les vaux saint basles, La pierre aux larons, les Bouités, les grandes ruelles. More full-bodied and vinous than the Blanc de Blancs. Complex, deep fruits, and elegant with a long finish. Nicola FEB24: (has those green aromas again that I can't place) Winey, full-bodied, strength, intensity, elegance. Moritz FEB24: Juicy blackberry, licorice, and a nice cardamom spice give the BdN great complexity. On the palate, full-bodied and juicy, but somewhat leaner than the Blanc de Blanc. The tight acidity provides a beautifully long finish. Tasting FEB20: Extremely long, elegant, great pinot fruit, dense, harmonious, balanced, not too heavy, creamy, acidity very well integrated
