Pre-fermentation maceration 3 to 4 days. Vatting for 15 days in total. Press wine added. Aging in oak barrels for 23 months. Bottled in August 2023 without filtration or fining. Only 304 bottles J.M. Sélèque: "An iconic place of our village, Les Gouttes d´Or is based on a complex soil at the bottom of the hill between ocher clay with flint and Campanian chalk. A typical geological mille feuille of Pierry." Nicola FEB23 (JG20): Exciting character: bacon, chocolate, smoky!

Still Wine - not Champagne100% Meunier Pressed white From Charly-sur-Marne and Mont de BonneilVinified in Barrique for 10 monthsJérôme Lefèvre: As I mostly do champagnes with a strong fruit I looked for a way to do a softer wine, also in terms of alcohol (Hunger for Speed is 13.35%, the Rosé Les Illuminations from Delalot is always a bit more than 14%). So I adapted the work at the parcel and I cut earlier to do a 10 degrees Coteaux but with a stunning fruit and richness. Very aerial and addictive.
