The vineyards lie on loamy and sandy limestone soils, some with flint in the municipality of Chavot-Courcourt. No use of pesticides or other chemical agents. Manual harvest with optimal ripening of the grapes, spontaneous alcoholic fermentation in at least 10 year old barriques from Burgundy for 6 months with regular stirring of the yeast ('bâtonnage'). No malolactic fermentation Then the base wines are fed into a Solera system. 40% reserve wines mature here, to which 60% of the current vintage is added every year.
