Jacques Lassaigne Clos Sainte Sophie 2017
Particularity!
The Clos Sainte Sophie is currently the only "Clos", of a total of 13 Clos of the Champagne, located in the Aube. It actually belongs to the family of the fashion label "Le Petit Bateau". Offshoots of this particular parcel were used at the time to plant the first vineyard in Japan in 1877. In 2010, Lassaigne signed a contract with the family to source grapes from this Clos. The grapes were aged in wooden barrels previously used for the production of Cognac, Mâcon-Solutré and Vin Jaune. Some barrels also come from the cellar of the legendary Jura winemaker Jean-François Ganevat! According to Emmanuel you should not taste the cognac note, some tasters nevertheless believed to taste it out, make your own picture.
