La Cuvée Gastronome is a young vintage concept where one can find it among a few producers of Champagne. It’s a cuvée in which we look for an expression of complexity and the richness of the vintage but with the freshness of the “sans année jeune. Historically created for the restoration (for "the cutting", but also to accompany a meal), this cuvée is elaborated in "small bubbles". This is to say that its bubbles are particularly fine in order for them not to be too perturb or papillas. Here, an excellent Champagne spirit, perfect as an aperitif, which will blossom throughout the meal and surprise your guests by its beautiful freshness and elegant matter". Olivier et Didier Gimonnet
A Cuvée of 100% Chardonnay, grapes manually harvested at the time of the very beautiful grape harvest of 2006, exclusively on our vineyard of the Côte des Blancs:- 45 % Chouilly Grand Cru (30 % Montaigu vieux et Chalet, 15% Rond Buissons) confering its elegance.- 19 % Cramant Grand Cru (Fond du Bateau, Buissons, Gromonts) bringing plumpness to the wine.- 16 % Oger grand cru (Terres de Noël, Brulis, Champs Nérons) giving power- 20 % Cuis 1er Cru (Croix-Blanche, Basses Vignes, Moyens) signing its vivacity and its freshness.This assembly presents the characteristics of a great Chardonnay wine in its youth, and expresses remarkably well "the Pierre Gimonnet & Fils style” … freshness, expression … and balance. A flattering vintage, it is undoubtedly the more "easy-drinking" of our range.

Antonio Galloni Vintage 2016 – 94P: This is a blend of Chardonnay mostly from Cramant, Chouilly and Cuis. It offers a compelling mix of dried herbs, lemon confit, marzipan, dried flowers and earthy tones. Rich and creamy, with tons of persistence, the 2016 has so much to offer.

In spite of his doctor's disapproval, Louis XIV preferred the good wines of Champagne to any other and the wine of Bouzy was thus one of the items in the King's inventory ledger at the Court of Versailles.
Paul Bara's Bouzy Rouge is one of the best in this category of still red wines. It is made from old vines of more than fifty years in age that are grown in a vineyard with ideal exposure.
The grapes are harvested and sorted by hand on a sorting table, ensuring that only the ripest and healthiest of them go into the wine. Bouzy Rouge is then fermented and matured in stainless steel vats until reaching its full potential. The resulting red wine makes a sensational partner for light grilled meats, roasted veal in herbs or country-style ham. Maison Paul Bara is a member of the famous Académie des Vins de Bouzy.

Lukas FEB23: In the nose floral and spicy notes, at the same time also rich. In the mouth full-bodied, very ripe apple with hints of caramel, fine spice in the background, the acidity is nicely integrated. Very long finish and a great food companion.
100% Pinot Noir
Dosage: 0g/l
Barrel fermentation, followed by maturation in barrique for 9-10 months. Bottled in spring.
The fruit comes from the same site as Resonance and thus shows the same distinctive terroir and minerality. The difference between the two Champagnes thus lies primarily in the barrel influence. When all runs well, oak provides well-made Champagne with a more complex and nuanced character. Rather than standing in the spotlight, the barrel here supports from the wings. It stabilizes and smooths the individual components into a stunning and balanced whole.
Antonio Galloni Vintage 2015 – 94P: Plum, cherry, spice and ginger meld into a deep core of Pinot fruit that continues to flesh out with a bit of time and aeration. There's terrific depth, density and creaminess here, not to mention tons of sheer personality.
