There are aromas of wet stones, citrus fruits, but also white almonds and salted caramel. On the palate, the aromas from the nose seem a little more tart due to the acidity. The long finish leaves a beautifully chalky/mineral aftertaste, which gives the champagne even more grip and length.Nicola JUN22: Perhaps the chalkiest, most mineral of the range, but again with that beautiful ripe fruit note. Exciting, mildly spicy, complex tone. On the third day: racy, spicy notes, strong character with enormous drinkability.

Strong, already gives a lot of pleasure. No wonder it has matured for about 10 years and comes from one of the most sought-after Grand Cru locations in Champagne: le Mesnil sur Oger. During the 2004 harvest, my wife Marie-Noëlle tried every must directly from the press, as she normally does. She had the feeling that three plots of old vines gave a very good taste: ripe, complex, elegant ... everything she loves. So she decided to let some of these pressings mature together. In February, during the base wine tastings, these plots confirmed that they had the potential to make a great vintage. Since my wife gave birth to our daughter in 2004 (December, so she was pregnant during the harvest), she naturally decided to dedicate this beautiful cuvée to her. Then, year after year, the vines continue to age and when the vintage gives it, Marie-Noelle still assembles this vintage. The vines face east on a thin layer of silite with a base of gravel and pure chalk. The eastern exposure gives the balance between photosynthesis and minerality. On the label is a girl, very well dressed, but with a natural style, because this cuvée is elegant, with finesse, but without makeup, only with the natural taste. The girl is carrying a bird cage, but the cage is open. It should show that we are open to nature and that nature should sing and express itself in a natural way. Life in nature is life. Larmandier-Bernier Longitude - Bio
100% Chardonnay Dosage: 3g/l 40% Reserve Perpetuelle At least 2 years of bottle maturity Previously, this cuvée had gone under the name of “Blanc de Blancs” since the beginning of the 20th century. It is made exclusively from our Chardonnays grown on the Côte des Blancs: Vertus, Oger, Avize, Cramant, which form a line close to the 4th meridian. “Longitude” is also an allusion to the length and the very pure, frank and mineral style of these great terroirs, where the chalk is very close to the surface. Vinification and maturation:The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks, our wooden vats and our stainless-steel tanks. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. The blending and the bottling are carried out in July. The bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place over a period of more than 2 years. Each bottle is disgorged manually 6 months before being marketed. The dosage is 3 grams per litre (extra-brut!).

This Blanc de Blanc does not belong to the minimalistic, mineral-driven style, but rather is round and balanced with a touch of fragrant flowers. Complex and nuanced due in part to the barrel influence and a perfect pairing partner at the table — to more than just fish! Nicola FEB24: A slightly richer release at the moment, very generous, a somewhat noticeable influence of wood, dried fruits, brioche. Moritz FEB24: Light, but very nice reduction, nose and palate reflect each other perfectly. Salty, wet stones, white almond are predominant, with a background of some dried apricot. All very calm. Henriet-Bazin Cuvée Hypolite Blanc de Blancs fût de chêne
100% Chardonnay Dosage: 4,5g/l At least 3 years of bottle maturity vinified in oak barrels Nicolas: "There is no special meaning behind this name. It's just a name that my wife Marie-Noelle and I really like. A long time ago we had the desire to mature our basic wine in wooden barrels (otherwise we still use enamel tanks but no stainless steel). At first we used used barrels from Burgundy, but this solution did not support our terroir as wine and barrels do not come from the same area. Next we bought new barrels, which were also made from French wood and hoped that our terroir could spread there and take possession of the wood. But we still weren't satisfied with that. There was still a lack of energy. Finally we found a manufacturer who agreed to make oak barrels from our forest. It was the only way for us to respect our terroir and make a champagne that only comes from our village. The oak was from the Chardonnay site of Villers-Marmery, so we made a single-variety Chardonnay cuvee. Hypolite on the label is well dressed, but more like a gentleman-farmer style because the character of the cuvée is stronger: strong but elegant. There is a “baby” oak on the front of the bike. Because he felled an oak for the barrel, he wants to plant a new one for the next generation. And because we work with the moon phase at every step, Hypolite searches for the moon to find the best place and the best moment for it." Tasting SEP20: Genreous prelude with present but fine wood aromas, salty towards the back, with honey and vanilla notes, slim in delivery due to low dosage, also has something classy, with minimally bitter notes, wonderful character! Still young at the moment, will become even more generous over time.
