Still wine made from 100% Meunier from the single vineyard “Au-dessus du village”. Soils of sand, marl and limestone. Spontaneous fermentation in used oak barrels, followed by one month of whole cluster maceration and subsequent aging in wood for 2 years (demi muids). 2 years of bottle aging. Minimal sulphur added. Unfined and unfiltered.

Pre-fermentation maceration 3 to 4 days. Vatting for 15 days in total. Nicola FEB24: On the palate there is a lot of structure and a fine red berry flavor that lingers for a long time in the grippy finish.

Half of the wine was aged in used barriques whose wood came from their own forest. The other half aged for eleven months in amphora. No malolactic fermentation, no fining, no filtration. The yeast aging on the bottle is at least 22 months. The name Causica derives from a subspecies of honeybee that has a special hairiness - similar to the leaves of Pinot Meunier. Causica smells invitingly of cookie and peach cream, with an exciting smoky undercurrent to everything. The palate shows plenty of structure as well as a fine red berry quality that lingers long on the grippy finish.

84% Pinot Noir16% Chardonnay Dosage: 0g/l Juicy, salty, mineral and complex! The cuvée of annually changing portions of Pinot Noir and Chardonnay from pure Grand Cru locations was fermented in barrels up to nine years old. The Benoît Marguet champagnes are filled without added sulfur and without dosage. Description of Sebastian Bordthäuser about 2016: Nose: The Shaman by Champagne Marguet from the 2016 vintage has been on the lees for around two years and entices with a richly filled display: yeast braid, brioche and pretzel biscuits as well as a generous piece of butter outline the notes of autolysis, which are enhanced by fine notes of apricot with increasing ventilation in the glass . Stoved apples follow, which are accompanied by herbal spices with aromas of sorrel and Giersch. Grounded through the obligatory ground oyster shell, the nose can look forward to the first sip. Mouth: With a creamy texture and small-sparkling Mousseux in the first taste, it is initially a bit quick-tempered, which can be attributed to the short time after the disgorgement and will soon go away. The bread notes of sourdough and pretzels of pretzels are aromatically reflected in the nose. On the palate it is precise but by no means leptosome, but with a good juice and joyful appearance.
