Package to the trend in Champagne: the "perpetual" reserve.
The reserve perpetuelle usually uses a tank or a large wooden barrel, where you put the respective vintage and the older also remain there. The older this reserve is, the more exciting and complex the assemblage becomes. Usually the reserve is then not used to 100%, but only a portion, instead of the classic reserve wines, but there are also cuvées that consist exclusively of the reserve Perpetuelle. The process is based on the sherry process.
