Jean-Baptiste has the right soils (mainly in Cumières), a very clear vision of what he wants to express in his champagnes, and the talent to bring all these components into the bottle. He is now supported by his daughter Sacha. Their style is expressive and intense in flavor, yet extremely precise and powerful—not soft and round, but harmonious with a smooth mouthfeel. The champagnes have an elegant and powerful fruitiness with a distinct minerality and perfectly integrated acidity.
A few years ago, the winery moved to a beautiful château in Aÿ. The decision was made because the entire process, from delivery to the barrel, can be carried out using natural gravity. A long maturation period is particularly important to Geoffroy, and 600,000 bottles are currently maturing in his cellar! Geoffroy avoids malolactic fermentation; if it starts on its own, he uses the lot for an assemblage.
They do not use cold stabilization and use as little sulfur as possible. They prefer to use old enamel tanks for fermentation, which are no longer manufactured today. This would produce the best flavor. When wood is used, they use barrels with low toasting to impart little to no wood flavor to the wine.
