100% Chardonnay Dosage: 5g/l At least 3 years of bottle maturity La Cuvée Gastronome is a young vintage concept where one can find it among a few producers of Champagne. It’s a cuvée in which we look for an expression of complexity and the richness of the vintage but with the freshness of the “sans année jeune. Historically created for the restoration (for "the cutting", but also to accompany a meal), this cuvée is elaborated in "small bubbles". They are low in sulfite (less than 35mg/l)! Riddling by hand in natural cellar! Tilman FEB24 (vintage 2019): Floral-frischer Beginn, dann mit leicht oxidativer Aromatik immer komplexer werdend, mit schönem Zug und würzigem Finish.  Tasting JUL21 (base 2016): powerful and spicy, lots of power, nice use of wood, expressive, exotic aromas, open aromatics but not too ripe, subtle spiciness, long finish. Tasting FEB20 (base 2014): 2014 has less acid than 2013, which makes it a bit more accessible, the wood aroma is beautiful, extremely long, nutty finish. High tension, like a whole feature film so complex, super nice spiciness - but rather delicate spiciness, prancing length. Tasting JUN19 (based on 2013): very independent, ethereal, floral, calm but resounding. Clean and gentle, yet powerful. Aromas cannot be grasped, with every sip of new flavors, always extremely harmonious. Light-footed, very long, somehow poetic. The acid is medium-strong, but still gripping, then melts off nicely, so that you catch up with the next sip. If he breathes longer he gets very delicate, extremely charming notes of milk candy - addictive potential!

In the mouth juicy and full-bodied, juicy peach and apple, nice acidity and some citrus and grapefruit on the finish. Rather subtle, fine champagne, excellent as an aperitif. Tasting APR21 (Vint. 2017): Flowery, delicate, straightforward, of ethereal elegance and, like a puff pastry, finely fanned out aromas. A captivating freshness and invigorating, firm structure characterize Etienne's almost crystalline style.

Oudiette Rosé d'Infusion Vendange 2020
98% Chardonnay 2% Meunier From the individual layers: "Les Gras d'Huile" - Chardonnay - south-east exposure"Les Cormonts" - Meunier - southern exposure Dosage: 1g/l Maxime: The Rosé d'Infusion started with a simple idea: to transfer the method of tea infusion to winemaking. After pressing, we wait for the Chardonnay juices to ferment and then we pick the most beautiful Meunier grapes from the “Les Cormonts” plot. The Meunier grapes are then carefully destemmed by hand to avoid damaging the seeds. Then we pour the Meunier grapes into the Chardonnay must. From then on, we control the infusion several times a day through blind tastings to assess the taste; the color intensity is irrelevant here. Once the perfect balance is reached, we take out the Meunier grapes with a net: the Rosé d'Infusion is born and will finish its fermentation in oak barrels. With indigenous yeasts Batonnage: Only when the wine needs it Liqueur de tirage: Wine from the Cuvée Rosé d'Infusion brewed with organic raw sugar. Dosage liqueur: Identical to Tirage liqueur but aged in Magnum for 18 months. Vinification and aging: Every year in barrels from the Tonnellerie de Champagne and François Frère. New kegs 20%, second fill kegs 20%, fifth fill kegs 60%. Aging of 9 months on the fine lees Sulphurisation: no sulphurisation during harvest to facilitate the work of native yeasts. After the alcoholic fermentation, a sulphurization of 2gr/hl is applied.Nikola OCT24: Moves me, although it's difficult to say exactly what it is. Perhaps the balance of freshness, flavour and this hidden profundity that Maxime also exudes. Rosehip tea, has something so sublime about it.Fabio OCT24: Not particularly fruity, but light red berries, super elegant and fine, profound, high complexity, super balance, very good! Tilman OCT24: Fresh, but not crisp, rather elegant, has real depth and structure, unusual dark flavour for Meunier, mineral-salty.

100% Pinot Noir single vineyard spontaneous fermentation biodynamic farming Dosage 1,5g/l Nicola OKT23 (Vintage 2019): Herbal-spicy with an expressive body. Lukas FEB23: In the nose ripe and spicy yellow fruit, some smokiness in the background and floral aromas reminiscent of chamomile and herbs. In the mouth, the herbal notes are in the foreground, along with some warm yellow fruit and a bit of ripe peach and apricot on the finish. Very juicy, acidity rather more present in the background.

100% Pinot Noir Single vineyard Spontaneous fermentation Biodynamic farming Dosage 0g/l Lukas FEB23 (Vint. 2018): In the nose spicy notes, ripe yellow fruit and hints of ripe honeydew melon. In the mouth juicy, hints of ripe orange and blood orange, again some fine spiciness and fine ripe yellow fruit in the background, very full-bodied. Nice acidity and fine balance between slightly riper fruit and juiciness. Tasting APR21 (Vint.2015): More dense and darker than "A travers Celles", spicy creaminess, full of pressure, flowery yeastiness, slightly tart finish, dark berries, very fine mousse, nice nutty finish.

100% Pinot Noir Single vineyard Beauregard Biodynamic farming Spontaneous fermentation Dosage: 0g/l 2-3 years bottle aging Etienne describes the wine beautifully: "The whole description of the wine is contained in this name "Beauregard": A beautiful look is at once gentle, subtle, delicate, without frills, without mascara. In short, its natural beauty is sufficient unto itself. Beauregard has this in its genes and especially in its soil. We are on the first subsidence of the Upper Kimmeridgian, directly under the Portlandien, whose rock is found in the upper part of the plot. In other words, we are on "pebbles" with white clay and a not very deep soil. So the wine immediately becomes more discreet, fine and subtle. The Pinots Noirs of Beauregard then give a delicate fruit, like cherry or currant or even raspberry. Being on the north side, we also get a lot of freshness. In short, it is again a whole new flavor, in the range of "Parcellaires" of Sandrin champagnes. Nicola OKT23: For Sandrin's calm and reserved champagnes, relatively expressive with singing fruit, straight and mineral.

Since 2019, this parcel is always vinified in two ways. The generosity of the terroir of Le Bruyant consists of deep brown clay, resulting in a particular expression of Pinot Noir. The parcel is located directly across from Mouille-Brant, af the other side of the river on a lower slope facing north. This makes the wines particularly fresh, restrained and delicate. The vineyard Mouille-Brant, facing south, is more for exuberance and aromatic explosion.
