Tasting APR21 (Vint. 2017): Flowery, delicate, straightforward, of ethereal elegance and, like a puff pastry, finely fanned out aromas. A captivating freshness and invigorating, firm structure characterize Etienne's almost crystalline style.

100% Pinot Noir Dosage 0g/l The vines grow on a demeter-certified 3.5 hectare plot, oriented to the southwest on so-called Kimmeridgian soil in Biaunes and Vouette. Average age of the vines: 40-50 years The unbranched vines are pressed with a traditional Coquard press and fermented in 400 and 228 liter wooden vats without the addition of yeast. After fermentation, the wine remains in the barrel on its lees for up to 10 months, during which time it undergoes malolactic fermentation. Approx. 95% from one year with a Minimum share of a perpetual reserve (start 2001) The champagne is bottled unfiltered and without dosage. Peter Liem: The primary wine of the estate is a blanc de noirs called Fidèle, made entirely of pinot noir and almost exclusively from Kimmeridgian soils in Biaunes and Vouette. It’s largely composed of a single year, with just three to seven percent of reserve wine, stored in a perpetual blend (a sort of mini-solera) started in 2001.

100% Chardonnay Dosage: 0g/l Peter Liem: In 2004, Gautherot began bottling a pure chardonnay called Blanc d’Argile, from the Biaunes vineyard. The vines here are young, having been planted in 2000, and unlike Vouette, which faces south, Biaunes has a western exposure, meaning that the grapes take a long time to ripen. Yields tend to be very low (a mere 15 hl/ha in 2004, resulting in only 1,100 bottles being produced), as Gautherot prunes the chardonnay here to only five bunches per vine, and this is well-reflected in the ample, mouth-filling character of this wine.

This is an especially bright expression of Pinot Noir. All the elements come together so effortlessly. The 2018 is simply captivating.

The aromatics alone are mesmerizing, but what I like most about the 2018 its energy and cut. The 2018 straddles this line beautifully, framed by bright acids that lend vibrancy to lemon peel, mint, white flower and grassy notes that build in the glass. This is one of the most interesting and compelling Champagnes I have tasted in some time.

Benoit Marguet Shaman 20 MAGNUM - Bio
87% Pinot Noir, 13% Chardonnay Dosage: 0g/l Juicy, salty, mineral and complex! The cuvée of annually changing portions of Pinot Noir and Chardonnay from pure Grand Cru locations was fermented in barrels up to nine years old. The Benoît Marguet champagnes are filled without added sulfur and without dosage. Description of Sebastian Bordthäuser about 2016: Nose: The Shaman by Champagne Marguet from the 2016 vintage has been on the lees for around two years and entices with a richly filled display: yeast braid, brioche and pretzel biscuits as well as a generous piece of butter outline the notes of autolysis, which are enhanced by fine notes of apricot with increasing ventilation in the glass . Stoved apples follow, which are accompanied by herbal spices with aromas of sorrel and Giersch. Grounded through the obligatory ground oyster shell, the nose can look forward to the first sip. Mouth: With a creamy texture and small-sparkling Mousseux in the first taste, it is initially a bit quick-tempered, which can be attributed to the short time after the disgorgement and will soon go away. The bread notes of sourdough and pretzels of pretzels are aromatically reflected in the nose. On the palate it is precise but by no means leptosome, but with a good juice and joyful appearance. Its mouth-watering saline vein nestles around the slim acid nerve and, in combination with the fine phenolic, gives it its non-slip, non-slip feel that accelerates its drinking speed immensely. Fruity and tart with animating notes of red, ripe apple in a long, smoky finish. Food Pairing: - Ravioli with young spinach in nutmeg butter and crumbs - Mussels with french fries - Fried chicken wings with red fermented tofu
