100% Chardonnay Dosage: 5g/l At least 3 years of bottle maturity La Cuvée Gastronome is a young vintage concept where one can find it among a few producers of Champagne. It’s a cuvée in which we look for an expression of complexity and the richness of the vintage but with the freshness of the “sans année jeune. Historically created for the restoration (for "the cutting", but also to accompany a meal), this cuvée is elaborated in "small bubbles". Tilman FEB24 (vintage 2019): Floral-frischer Beginn, dann mit leicht oxidativer Aromatik immer komplexer werdend, mit schönem Zug und würzigem Finish.  Tasting JUL21 (base 2016): powerful and spicy, lots of power, nice use of wood, expressive, exotic aromas, open aromatics but not too ripe, subtle spiciness, long finish. Tasting FEB20 (base 2014): 2014 has less acid than 2013, which makes it a bit more accessible, the wood aroma is beautiful, extremely long, nutty finish. High tension, like a whole feature film so complex, super nice spiciness - but rather delicate spiciness, prancing length. Tasting JUN19 (based on 2013): very independent, ethereal, floral, calm but resounding. Clean and gentle, yet powerful. Aromas cannot be grasped, with every sip of new flavors, always extremely harmonious. Light-footed, very long, somehow poetic. The acid is medium-strong, but still gripping, then melts off nicely, so that you catch up with the next sip. If he breathes longer he gets very delicate, extremely charming notes of milk candy - addictive potential!

Nicola FEB24: Aromatic, creamy, full-bodied with a straightforward finish, has a slightly matured aspect due to the oxidative style. Moritz FEB24: More mature than the last releases: Wonderful aromas of hayflower, white almond, and fresh garden herbs. Despite the light, well-integrated oxidative notes, the Apolline comes across quite fresh and straightforward, creating a wonderful symbiosis between nose and palate. Daniela Dejnega: Typical aromas of aged Chardonnay: creamy, subtly vanilla and also very rich with notes of brittle and buttercream paired with a tight acid structure. Thanks to low dosage and long aging, it never seems too cheesy. Nicola JUN22: Very nicely developed, great body, complex, clean polished + approachable, great drinkability. Gets richer, more lush when open. Gets even more drinkable with time! With beautiful silky honey notes and nutty-brioche finish. Moritz AUG22: Straight with ripeness, with an incredibly fine aroma of salt lemon and wet limestone. The perlage dances super fine over the tongue, making the wine seem extremely elegant. With time, the nose opens up again. The initial fresh salt lemon evolves into a softer grilled lemon. This is joined by notes of salted caramel and a slightly nutty marzipan finish. Elegant, complex BdB with an incredibly long finish.  Moritz OCT22: The beautiful golden-yellow color immediately catches your eye and you immediately want to put your nose in the glass. A certain warmth flows through the body. The slightly oxidative nose is incredibly exciting. Nutty, notes of salted caramel, wet stones and subtle citrus zest flow towards you. The champagne appears fresher on the palate than on the nose, but the taste reflects the smell incredibly well. The taut, crisp acidity animate to drink and unfortunately the bottle is drunk far too quickly.

100% Chardonnay From the Grand Cru vineyards of Cramant (old vines) Dosage: 3g/l Vinified in wooden barrels for 9 months 3 years bottle aging on the lees Unfined and unfiltered This cuvée is made from grapes grown on the estate's oldest plots, selected with the greatest care to bring out the unique nuances of the terroir (Le Grand Cru de Cramant) of the Côte des Blancs. Aromas of fresh fruit and a creamy-mineral persistence are supported by toasted notes. Gripping on the palate with a fresh minerality. Nicola FEB24: Minimal sherry note, matured, with a finish of salted caramel. Moritz FEB24: Despite the beautiful maturity (slight oxidative notes), the Cuvée Constantin appears quite austere. Wet stones, citric, but also aromas like white almond and salted caramel are found. On the palate, the aromas from the nose appear somewhat more tart under the present acidity. The long finish leaves a nicely chalky/mineral aftertaste, which gives the champagne even more grip and length. Nicola JUN22: Perhaps the most chalky, mineral from the range, but again that lovely ripened fruit note. Exciting mildly spicy complex tone.  On the 3rd day: racy, spicy notes, strong character with enormous drinking flow. Moritz OCT22: The rich style of Leclaire-Thiefaine is conveyed most strongly in Cuvée 03 Constantin. The slightly oxidative nose shows a wonderfully profound spice and orange fruit. On the palate, an interplay of aromas of orange citrus fruits, spice and light notes of brioche is carried by the incredibly elegant perlage. A champagne that hugs you and won't let go.

In the mouth, the herbal notes are in the foreground, along with some warm yellow fruit and a bit of ripe peach and apricot on the finish. Very juicy, acidity rather more present in the background.

In the mouth juicy, hints of ripe orange and blood orange, again some fine spiciness and fine ripe yellow fruit in the background, very full-bodied. Nice acidity and fine balance between slightly riper fruit and juiciness. Tasting APR21 (Vint.2015): More dense and darker than "A travers Celles", spicy creaminess, full of pressure, flowery yeastiness, slightly tart finish, dark berries, very fine mousse, nice nutty finish.

100% Pinot Noir Single vineyard Beauregard Biodynamic farming Spontaneous fermentation Dosage: 0g/l 2-3 years bottle aging Etienne describes the wine beautifully: "The whole description of the wine is contained in this name "Beauregard": A beautiful look is at once gentle, subtle, delicate, without frills, without mascara. In short, its natural beauty is sufficient unto itself. Beauregard has this in its genes and especially in its soil. We are on the first subsidence of the Upper Kimmeridgian, directly under the Portlandien, whose rock is found in the upper part of the plot. In other words, we are on "pebbles" with white clay and a not very deep soil. So the wine immediately becomes more discreet, fine and subtle. The Pinots Noirs of Beauregard then give a delicate fruit, like cherry or currant or even raspberry. Being on the north side, we also get a lot of freshness. In short, it is again a whole new flavor, in the range of "Parcellaires" of Sandrin champagnes. Nicola OKT23: For Sandrin's calm and reserved champagnes, relatively expressive with singing fruit, straight and mineral.

The parcel is located directly across from Mouille-Brant, af the other side of the river on a lower slope facing north. This makes the wines particularly fresh, restrained and delicate. The vineyard Mouille-Brant, facing south, is more for exuberance and aromatic explosion.

David Leclapart L’Amateur '20 - Bio
100% Chardonnay Dosage: 0g/l L’Amateur is the house's entry-level cuvée, a blend of six different parcels in Trépail. This single-origin Chardonnay is vinified in enamelled 33 hl steel tanks - Léclapart does not use stainless steel tanks because he is convinced that this generates negative energy. Like all of the house's wines, L'Amateur goes through malolactic fermentation, there is no fining or filtration whatsoever. The result is a powerful Chardonnay, pure and without make-up with a mineral bite. Léclapart's champagnes are different, headstrong and fascinating. The "L'Amateur" is particularly recommended for getting to know the style, as it already gives an idea of what is still to be discovered. Be sure to carafe or ventilate for a long enough time! Peter Liem: The entry-level cuvée is called L’Amateur, blended from five different parcels in Trépail and vinified entirely in enameled 33 HL. steel tanks—Léclapart has no stainless steel anywhere in his cellar, as he believes that it promotes negative energy.
