70% Pinot Noir 20% Chardonnay 10% Pinot Blanc Dosage: 4,5 g/l From three sites and three different locations: Val Moré in Bar Sur Seine, Les Devoix in Merrey Sur Arce and Clos Bidaut in Ville Sur Arce.With three different orientations: East, South, West (sunrise to sunset). Spontaneous fermentation 15% reserve wines 10% with Malolactic fermentation 30 months bottle agingTilman MAI24: Initially appears restrained, floral and light, almost harmless, but develops a great floral aroma paired with a dark spiciness on the palate. Light and animatingly tart, always fresh and with a long and intense mineral-salty finish! Nicola OCT23: Fragrant, floral, still youthful, slightly ethereal, light-footed with subtle fruit David OCT23: subtle, reserved fruit notes, herbal, earthy touch. It appears sparse, but is expressive and complex. Mineral, salty finish Lukas FEB2023 (base vintage 2020): Riper fruit notes on the nose, juicy yellow peach and hints of cardamom. The mouth is dominated by very juicy peach flavors (yellow and vineyard peach), plus light apricot notes and hints of black elderberry on the finish, the acidity is very lively and ideally supports the full-bodied fruit flavors, plus a nice length. Very animating and makes you want to drink the next glass.  Lukas DEZ2022: Herbaceous notes dominate the nose, along with a little Helene pear and subtle yeast notes. In the mouth, fresh aromas dominate, apple, hints of grapefruit, backed with fine yeast and wood spice, very round and animating.

Domaine La Borderie Rosé de Saignée Douce Folie
100% Pinot Noir From the "Douce Folie" parcel in Merrey sur Arce with south-west exposure (good ripeness). This parcel is particularly well suited for the production of Saignée Rosés: 50 year old vines, limited yields The rosé is produced only in vintages when the conditions and the ripeness of the grapes are optimal. Vinification: maceration of about 48 hours in stainless steel tanks, maceration is interrupted once the desired color is achieved. Malolactic fermentation in stainless steel tanks. Dosage: 2g/l 24 months bottle aging Nicola OCT23: Complex, very beguiling, light-footed and fine-berry rosé David OKT23: expressive nose, floral, berries, dense; Creamy start on the palate, freshness and fruit are accompanied by minerality and wineiness with a fine tannin structure. Lukas FEB23: In the nose juicy cherry and blackberry backed by a light smokiness. In the mouth cherry and strawberry backed by a nice acidity, very juicy with a long finish. A very drinkable rosé with character that shows some great potential as a food companion.

100% Pinot Noir Dosage: 3g/l From the single vineyard "De Quoi Te Mêles-Tu? " ("Mind your own Business") in Neuville sur Seine (planted in 1980) with northern exposure. Spontaneous fermentation in Inoxtanks 12% Vinification in wooden barrels (FML blocked) 30 months bottle aging Nicola OCT23: Super beautiful Pinot Noir fruit with a nutty aftertaste. David OCT23: Refined yet subtle fruit on the nose, intoxicating spiciness with hints of licorice, great freshness, juiciness and structure on the palate, wonderful mouthfeel, complex but not strenuous. Lukas FEB23 (base vintage 2020): In the nose very ripe vineyard peach, some apricot, in the background warm yeasty notes. In the mouth juicy pear and peach plus hints of ripe apple. Very nice length and fine spice on the finish. Full-bodied and complex, opens up beautifully with a little air and shows its full potential. Nicola DEZ22: Deep, puristic Pinot Noir fruit, you have to get involved in order to then discover a very complex inner world. Seriously but very well done, also great food companion.

Full-bodied and juicy in the mouth, with primarily apple and peach notes, hints of apricot and juicy vineyard peach on the finish. Very animating with a very good draw.
