Type "Simple & Splendid"

This category falls into champagnes that are on the fruity side, nice and easy to drink with no rough edges – but not mundane either!

This type is used as an aperitif or for receptions on solemn occasions where the tastes of many different palates need to be satisfied (birthdays, weddings, etc.).

A perfect example of this is. J. Lassalle Preference. Only women work in this winery and you can feel their zest for life and happiness with every sip of champagne. This champagne just seeps away after opening, so you should always have a second bottle in the fridge.

Type "Grace and Elegance"

This type already has more to offer in terms of complexity than the uncomplicated type. However, it is not a powerhouse in the glass, but rather unfolds its aromas in a fine and subtle way. You have to get involved with this champagne or you want a champagne that doesn't come to the fore too much. Can be served both as an aperitif and with food, then it is best served with antipasti, stewed fish or scallops or white meat with sauces that are not too aromatic.

At this point we recommend Diebolt-Vallois Tradition Extra Brut. Made more in the classic way, it impresses with an incredibly round, complete and at the same time very fine and complex way.

Type "Robust & Riveting"

This type of champagne has a strong presence that everyone notices immediately from the first sip. It usually consists of dark grape varieties such as Pinot Noir or Pinot Meunier and the producers pursue a style that is characterful and expressive. He can be rough around the edges at times, but that's what makes this guy so exciting. It may not appeal to everyone, but it certainly leaves no one indifferent.

The champagne winery Dosnon from the Aube has implemented this type perfectly: Recolte Noire
