Für unseren Champagne Character "Puristisch & Analytisch" haben wir Tine getroffen. Sie unterstützt unser Team als Angel bei ChaCha und ist auch in unserer Boutique anzutreffen. Nebenbei engagiert sie sich mit viel Herzblut: Sie arbeitet mit obdachlosen Frauen, begleitet straffällig gewordene Männer auf ihrem Weg zurück in den Alltag und sorgt in der Opernrequisite für kreative Details. Hilfsbereit und manchmal sogar ein wenig „überbordend“ in ihren Aktionen, strahlt sie dabei eine besondere Klarheit und Authentizität aus.

Für Tine muss eine gute Flasche Champagner vor allem Spaß machen und zur jeweiligen Stimmung passen. Wenn sie sich jedoch für einen Champagne Character entscheiden müsste, dann wäre es Puristisch & Analytisch.

Puristische, analytische Champagner zeichnen sich durch Präzision, Klarheit und Geradlinigkeit aus. Sie verzichten auf Überfluss und setzen stattdessen auf Struktur, Eleganz und Tiefe. Entstanden aus sorgfältig selektierten Grundweinen, meist im Edelstahl ausgebaut und mit niedriger Dosage versehen, zeigen sie eine kristalline Stilistik, die Klarheit ins Glas bringt.

Das Ergebnis sind Cuvées, die zurückhaltend und zugleich vielschichtig wirken: straffe Säure, feine Frucht, subtil florale und würzige Nuancen. Ein Champagner, der sich Schicht für Schicht entfaltet – ideal als präziser Aperitif oder als Begleiter zu Sushi und feiner, aromatisch klarer Küche.

Für unseren Champagne Character „Ambitioniert & Anspruchsvoll“ haben wir Lisa getroffen. Sie studiert Politik und Geschichte und arbeitet bei Gault&Millau. Klar, leidenschaftlich, kommunikativ, pragmatisch – und temperamentvoll.
Ambitioniert & anspruchsvolle Champagner sind kraftvoll, strukturiert und komplex: Cuvées mit Tiefgang und Haltung. Sie vereinen das Beste aus mehreren Jahrgängen, reifen lange auf der Hefe und profitieren von Reserveweinen – teils sogar Perpetuumreserven.
Ausdrucksstarke Rebsorten wie Pinot Meunier und Pinot Noir liefern Struktur, Chardonnay bringt Frische und Präzision. Teilweiser Holzausbau schenkt Würze und Komplexität; eine niedrige Dosage schärft die klare Kontur.
Der Duft entwickelt sich stetig: Kirsche, Johannisbeere, Apfel, Zitruszeste, Kräuter sowie Brioche, Cantuccini und Kardamom. Ideal zu charaktervoller Küche oder pur – für alle, die Anspruch und Tiefe im Glas suchen.

Im Gespräch wirkt sie ebenso klar wie leidenschaftlich. Lisa beschreibt sich als kommunikativ, pragmatisch – und temperamentvoll.

Ambitioniert & anspruchsvolle Champagner sind kraftvoll, strukturiert und komplex – Cuvées mit Tiefgang, die nicht jedem gefallen wollen, sondern Haltung zeigen. Ihr Stil lebt von Substanz, Länge und aromatischer Spannung. Sie vereinen das Beste aus mehreren Jahrgängen, profitieren von langen Hefelagerzeiten und einem gezielten Einsatz von Reserveweinen oder sogar Perpetuumreserven.

Die Stilistik ist geprägt von Rebsorten mit Ausdruck – wie Pinot Meunier und Pinot Noir, ergänzt durch Chardonnay für Frische und Präzision. Teilweise im Holz ausgebaut, gewinnen sie an Würze, Dichte und Komplexität. Die meist niedrige Dosage verleiht ihnen eine präzise, schnörkellose Kontur.

Anspruchsvolle, ambitionierte Champagner sind kraftvoll, strukturiert und vielschichtig. 100% Chardonnay Dosage: 2g/l Our old vines in Cramant face south-east and are blessed with an exceptional terroir. They are aged between 48 and over 75 years old. Their deep root system and the diversity of the old stocks contribute to the complexity of the wine. Since we created this cuvée in 1988, we have been explaining the difference between « Cramant » and « Crémant ». In order to avoid this confusion, we have decided to change the name : Vieille Vigne de Cramant becomes Vieille Vigne du Levant! Indeed, Vieille Vigne de Cramant’s parcel is called « Bourron du Levant » and Levant means the East, the first sun rays in the morning. In Cramant, the Levant is very different from the vines located on the other side of the hill, West facing. The East-facing vines give particularly rich and powerful grapes, this is quite a magic place. Vinification: The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks and our wooden vats. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. If the year merits it, this cuvée will be bottled in July as a vintage. No need to blend, this is a single vineyard. Tasting & Rankings Robert Parker/Wine Advocate SEP2020 - 2011 Larmandier-Bernier Extra-Brut Blanc de Blancs Grand Cru Vieille Vigne du Levant: I'm increasingly convinced that Pierre Larmandier produced Champagne's wines of the vintage this year, and the 2011 Extra-Brut Blanc de Blancs Grand Cru Vieille Vigne du Levant only compounds that suspicion. Unfurling in the glass with a deep and complex nose of citrus zest, crisp yellow apples, smoke, warm bread, mandarin oil and oyster shell, it's full-bodied and fleshy but incisive, with huge concentration, bright acids and a long, intensely saline finish. Totally transcending the reputation of 2011, it has many of the textural properties of a great white Burgundy, married with the cut and chalky grip of Champagne's Côte de Blancs

Extremely vibrant. The palate has richness of fruit with white peach and apricot flavors. Sturdy structure supports ripe and concentrated fruit. Grape maturity is expressed at an elite level here – a gift of the terroir and its interpreters. The acidity is striking, driving a deep, sorbet-like finish. Drink now. WineAdvocate/Robert Parker - September 2020  || 96 points - Disgorged in October 2019, Larmandier-Bernier's 2013 Extra-Brut Blanc de Blancs Grand Cru Les Chemins d'Avize is showing brilliantly, unfurling in the glass with a lovely nose of citrus oil, fresh apricot, peach and pear, complemented by hints of fresh walnuts and almond paste. Full-bodied, deep and vinous, it's layered and elegantly muscular, with a concentrated core of ripe fruit, racy acids and a long, mineral finish. Pierre Larmandier invariably excels in cool, late growing seasons, so the 2013 vintage was perfectly adapted to his talents.  The Champagne Guide - Tyson Stelzer, 2014-2015: LES CHEMINS D'AVIZE Grand Cru Blanc de Blancs Extra Brut 2009 : Disgorged on the spot without dosage, hence is unscored, but worthy of at least 95 points.

100% Chardonnay Dosage: 4,5g/l At least 3 years of bottle maturity vinified in oak barrels Nicolas: "There is no special meaning behind this name. It's just a name that my wife Marie-Noelle and I really like. A long time ago we had the desire to mature our basic wine in wooden barrels (otherwise we still use enamel tanks but no stainless steel). At first we used used barrels from Burgundy, but this solution did not support our terroir as wine and barrels do not come from the same area. Next we bought new barrels, which were also made from French wood and hoped that our terroir could spread there and take possession of the wood. But we still weren't satisfied with that. There was still a lack of energy. Finally we found a manufacturer who agreed to make oak barrels from our forest. It was the only way for us to respect our terroir and make a champagne that only comes from our village. The oak was from the Chardonnay site of Villers-Marmery, so we made a single-variety Chardonnay cuvee. Hypolite on the label is well dressed, but more like a gentleman-farmer style because the character of the cuvée is stronger: strong but elegant. There is a “baby” oak on the front of the bike. Because he felled an oak for the barrel, he wants to plant a new one for the next generation. And because we work with the moon phase at every step, Hypolite searches for the moon to find the best place and the best moment for it." Tasting SEP20: Genreous prelude with present but fine wood aromas, salty towards the back, with honey and vanilla notes, slim in delivery due to low dosage, also has something classy, with minimally bitter notes, wonderful character! Still young at the moment, will become even more generous over time.

100% Chardonnay Dosage: 2g/l Our old vines in Cramant face south-east and are blessed with an exceptional terroir. They are aged between 48 and over 75 years old. Their deep root system and the diversity of the old stocks contribute to the complexity of the wine. Since we created this cuvée in 1988, we have been explaining the difference between « Cramant » and « Crémant ». In order to avoid this confusion, we have decided to change the name : Vieille Vigne de Cramant becomes Vieille Vigne du Levant! Indeed, Vieille Vigne de Cramant’s parcel is called « Bourron du Levant » and Levant means the East, the first sun rays in the morning. In Cramant, the Levant is very different from the vines located on the other side of the hill, West facing. The East-facing vines give particularly rich and powerful grapes, this is quite a magic place. Vinification: The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our casks and our wooden vats. The wines are left on their natural lees for nearly a year and undergo gentle bâtonnages, but no filtering or fining. If the year merits it, this cuvée will be bottled in July as a vintage. No need to blend, this is a single vineyard. Then the bottles are then taken down into the coolness of our cellars, where the second fermentation and the maturation 'on laths' quietly take place over a period of a minimum of 5 years. Each bottle is disgorged manually 6 months before being marketed. Unfurling in the glass with a deep and complex nose of citrus zest, crisp yellow apples, smoke, warm bread, mandarin oil and oyster shell, it's full-bodied and fleshy but incisive, with huge concentration, bright acids and a long, intensely saline finish. Totally transcending the reputation of 2011, it has many of the textural properties of a great white Burgundy, married with the cut and chalky grip of Champagne's Côte de Blancs
