Jérôme Lefèvre: As I mostly do champagnes with a strong fruit I looked for a way to do a softer wine, also in terms of alcohol (Hunger for Speed is 13.35%, the Rosé Les Illuminations from Delalot is always a bit more than 14%). So I adapted the work at the parcel and I cut earlier to do a 10 degrees Coteaux but with a stunning fruit and richness. Very aerial and addictive.
