Maxime Oudiette cultivates 4 hectares of vines in Beaunay, which is tucked away in the Coteaux du Petit Morin behind the Côte des Blancs. For a long time, this was no man's land in Champagne, but he shows what this diverse terroir is capable of. To make this tasty, he works with a balanced combination of organic, biodynamic, wine forestry and permaculture techniques.
Maxime wants to understand exactly what each plot wants to express. The grapes are pressed and vinified per parcel in order to visualise the influence of the soil on the wines. Fermentation is spontaneous and there is virtually no intervention during vinification. He learnt from Jacques Selosse, among others, who helped him to find his own style. This is all the more remarkable as he does not emulate his style at all: his champagnes are not particularly oxidative, but polished, delicate, almost tender. In this delicacy, however, they are enormously profound and at the same time possess the necessary pressure and vitality.
His vineyards are mainly planted with Chardonnay and Meunier, Pinot Noir and some Pinot Gris. The average age of the vines is 39 years, which, according to Maxime, favours the mineral expression of his champagnes. They combine contrasts, are fresh but at the same time calm, aromatic and yet puristic and extremely elegant.
