Nicola FEB23: The flavor is intense but not overly experimental—a captivating character! Various citrus notes are present, along with herbal and floral elements (often found in so-called "forgotten grape varieties"), interesting and diverse fruit aromas (rather light), lovely brioche, and minerality (saltiness). Dry and crisp, with a very low dosage. It also has a creamy texture on the palate—a truly exciting blend. When we tasted it in April, our impression was that it's a harmonious, expressive, and unique composition.
The Janisson-Baradon 7 Cépages is an exceptional cuvée from Épernay in Champagne, uniting all seven permitted grape varieties of the region. In addition to the classic varieties Chardonnay, Pinot Noir, and Pinot Meunier, this Champagne also contains the rarer grape varieties Pinot Blanc, Pinot Gris (Fromenteau), Arbane, and Petit Meslier. The blend consists of approximately 15% each of Pinot Blanc, Pinot Gris, Arbane, Petit Meslier, and Pinot Meunier, as well as 13% Pinot Noir and 12% Chardonnay.
This unusual assemblage lends the Champagne a particularly complex aromatic profile, making it one of the most exciting creations from the House of Janisson-Baradon. The grapes come from several parcels around Épernay in the Vallée de la Marne. After gentle pressing, the wines are vinified in stainless steel tanks without malolactic fermentation or filtration to preserve as much character and freshness as possible.
With a very low dosage of approximately 2 g/l (Extra Brut), this Champagne is exceptionally dry, precise, and terroir-driven. The result is a multi-layered Champagne with a mineral structure, delicate yeasty aromas, and remarkable freshness.
